What are Devilled Sausages

Devilled sausages (or deviled sausages) are basically sausages cooked in a spicy gravy or sauce. Devilled is usually a “spicy” way to cook or serve a dish. Think devilled eggs. Think ultimate comfort food.

A simple family-friendly one pan meal that is a perfect midweek meal. Serve with creamy mashed potatoes. Or make it low carb it with our (amazing) Cauliflower Mash.

Curry powder – I use my Malaysian Meat Curry Powder which is similar to Babas Meat Curry Powder. You can use any curry powder you prefer. Keens Curry is most commonly used however it does contain rice powder. You can also use a curry paste in this sausage curry.

Sausages – choose the sausages you love the most. Beef sausages, pork sausages, chicken sausages, chipolatas, or vegetarian sausages. The choice is yours. I choose low carb sausages or get my local butcher to make some up with my own spice mix and no additives.

Sweetener – For sweetener I have chosen Sukrin Gold. You can use brown sugar or unrefined sweeteners for a slightly higher carb sausages in gravy recipe. For our low carb keto followers just choose any brown (or white) sweetener you prefer. It does taste better with a little sweetening.

Sauces – I do use gluten free Worcestershire sauce. Worcestershire does contain sugar. If you prefer to use coconut aminos go for it. There are also some low carb low in sugar ketchups in the supermarket, alternatively you can use my keto Tomato Ketchup recipe. You can replace the ketchup with fresh tomatoes if you prefer. The gravy may just need further reducing because of the excess water.

Vegetables – while I only use onions in my devilled sausages recipe you can add extra vegetables if you like. Chopped carrot and celery are perfect. If you aren’t following a keto diet you might like to add some diced potato, sweet potato, or serve with mashed potatoes.

How To Make Them

Step 1. Heat the oil in a large frying pan over medium heat. Add the sausages, garlic, and onion, and cook sausages until browned on all sides and the onion has softened. (Optional) If you prefer the sausages sliced for easier eating later, slice them into bite-sized pieces and return to the pan.

Step 2. Add the remaining ingredients to the pan. Bring to the boil then turn down to a low simmer. Cook, stirring occasionally until the sauce has thickened, about 5 minutes. Serve on a bed of cauliflower mash or cauliflower rice and garnish with coriander leaves.

Can I freeze devilled sausages?

Absolutely! Freeze individual portions in an airtight container for a freezer-friendly keto meal.

How to make devilled sausages in the slow cooker?

Brown the sausages and slice them first. Add all the ingredients to the slow cooker and cook on low for 4-6 hours or high 2-3 hours. Turn the heat up to thicken as needed.

Can I make devilled sausages in my Instant Pot?

To cook deviled sausages in the Instant Pot just add all the ingredients to the pot and give a good stir Seal the lid and cook on Pressure/5 minutes/natural release. Thin the sauce out with some extra stock or water, if needed.

What is the best way to cook sausages?

I cook the sausages in the pan a little oil to help brown them quickly. You place lid over the top to cook through thick sausages quickly. The sausages can be grilled, barbecued or baked in the air fryer if you prefer.

Ingredients 

  • 1 tablespoon (1 tablespoon) olive oil
  • 8 (8) pork or beef sausages I use low carb sausages
  • 1 (1) onion sliced
  • ½ cup (0.5 cup) beef stock
  • ¼ cup (0.25 cup) sugar-free tomato sauce or tomato puree
  • 2 tablespoons (2 tablespoons) Worcestershire sauce I use gluten-free
  • 1 tablespoon (1 tablespoon) mustard yellow American or English
  • 1 tablespoon (1 tablespoon) brown sweetener
  • 1 teaspoon (1 teaspoon) curry powder see notes
  • ½ teaspoon (0.5 teaspoon) cumin
  • ½ teaspoon (0.5 teaspoon) cayenne pepper or smoked paprika
  • Salt and pepper to taste

Instructions

CONVENTIONAL METHOD

  • Heat the oil in a large skillet over medium heat. Add the sausages and onion; saute until the sausages are browned on all sides and the onion has softened.
  • (optional step) If you prefer the sausages sliced for easier eating later, slice them into bite-sized pieces and return to the pan.
  • Add the remaining ingredients to the pan. Bring to the boil then turn down to a low simmer. Cook, stirring occasionally until the sauce has thickened, about 5 minutes. Serve on a bed of cauliflower mash or rice and garnish with coriander leaves.

THERMOMIX METHOD

  • Heat the oil in a large skillet over medium heat. Add the sausages and onion; saute until the sausages are browned on all sides and the onion has softened.
  • If you prefer the sausages sliced for easier eating later, slice them into bite-sized pieces and transfer them to the mixer along with the onions.
  • Add the remaining ingredients; cook 8 min/100°C/reverse/speed 1. Serve on a bed of cauliflower mash or rice and garnish with coriander leaves.

Notes

INGREDIENTS AND SUBSTITUTES
Any vegetable(s) of choice can be added to the devilled sausages. If you do add root vegetables cooking times might need to be extended. Some people make curried sausages with apple or dried fruit, this version is low in carbs.
For sweetener, I have chosen Lakanto Brown. You can use brown sugar or unrefined sweeteners for a slightly higher carb sausages in gravy recipe. For our low carb keto followers just choose any brown (or white) sweetener you prefer. It does taste better with a little sweetening.
Find low carb sausages at the supermarket or ask your butcher to make them. I use Three Aussie Farmers sausages from Coles supermarkets. They have a range of sausages between 1-2 g net carbs per sausage. This recipe will work with any sausage choice, beef, pork, chicken, or vegetarian.
Curry Powder – I have used my Malaysian Meat Curry Powder, but you can use your favourite curry powder, like Keens Curry Powder or any curry paste you like. We have a great Massaman or Red Curry Paste that would go great with this curry sausage recipe.
Sauces – I do use gluten free Worcestershire sauce. If you prefer to use coconut aminos go for it. There are also some low carb low in sugar ketchups in the supermarket, alternatively you can use my keto Tomato Ketchup recipe.
For a delicious keto vegan devilled sausages option simply replace the sausages for vegan sausages and swap the broth for a vegetable broth.
Devilled Sausages in the Thermomix – I have included a Thermomix method and still brown the sausages in a pan. You could steam them in the basket if you prefer or squeeze meatballs of the sausage mince out of the skins straight into the sauce and cook them in the sauce in the Thermomix. Check after the first 8 minutes to see if your meatballs are cooked through and extend the time if needed.
This recipe yields approximately 4 servings. The actual number of servings will depend on your preferred portion sizes. 
To calculate the weight of one serving, prepare the recipe as instructed. Weigh the finished recipe, then divide the weight of the finished recipe by 4. The result will be the weight of one serving.

    You can boil the sausages first to remove the fat. Takes about 5-10 minutes after boiling, depending on thickness.

    A simple, tasty meal that I really really enjoy. I ramp up the spices & add fresh chilli as well as chunks of red & green capsicum like the devilled sausages we ate in Sri Lanka. I serve it on a bed of brown rice. Sometimes I preboil the suausages or I use leftover bbq sausages.
