Low carb – at less than 1g net carbs per serve this barbecue pork is keto friendly and a healthy pork dinner option.
Family-friendly! – everyone loves barbecue pork ribs, don’t they? This meal (in my opinion) is even better! Boneless pork is the new way to do ribs!
Various cooking methods – I have given instructions for cooking this on the stove as well as in your Thermomix or Magimix.
Air Fryer – cooking boneless pork ribs in the air fryer is so easy. It is also my preferred cooking method. The air fryer speeds up the process and gives the pork a nice crispy crust while keeping the pork tender on the inside.
Boneless Country Style Pork Ribs
My keto country style pork ribs recipe came about because I just couldn’t buy any baby back ribs when I wanted them. So, I thought pork scotch would do the trick. After making them and falling in love with them I looked up boneless pork ribs and it already is “a thing”.
Seasoned and deliciously meaty with no bones, this is a great dish that the whole family will love.

The Ingredients

Pork Scotch – Also known as pork neck, pork butt or shoulder butt. You can use spareribs, pork belly, and forequarter chops. Or even bone-in ribs like baby back ribs, full ribs or even beef or lamb ribs.
Rib Rub – I use my own Pork Rib Rub seasoning recipe. You can use any store-bought you prefer. Just be mindful that a lot of seasonings from the supermarket have fillers and sugar.
Chicken Smoker Rub – this seasoning for chicken is amazing with pork. A Nashville chicken style keto seasoning substitute, this is the perfect seasoning for pork.
Keto BBQ Sauce – the BEST sugar-free barbecue sauce ever! No lies! This keto barbecue sauce is seriously awesome and a must-make in my opinion. This sauce is a delicious balance of sweet barbecue and a nice bit of tang from the apple cider vinegar.
How To Make It

Step 1. Slice the pork into strips similar in size to pork ribs. Season with the rib rub.

Step 2. Place into the air fryer. (See the recipe card for how to cook in the smoker or oven baked boneless pork ribs). It doesn’t matter if the pork is stacked as long as your draw can still close.
- Set the air fryer to 15 minutes/170°C(340°F).
- Turn the pork over at this stage moving any pork on the bottom to the top layer. Cook for a further 10 minutes/170°C(340°F).

Step 3. When the pork is almost cooked to your liking baste the pork with the barbecue sauce. Cook for a remaining 5-10 min/170°C(340°F) or until cooked to your liking. Serve with extra sauce for dipping.

Different Ways to Cook Country Ribs
With everything we do we try and give you as many ways to cook our recipes. These boneless pork ribs can be baked, cooked, steamed, barbecued and smoked.
If you want to use your crockpot you can. I would just finish them off after they are fork-tender in a hot oven or on the grill. Do the same for slow cooker boneless ribs.
Instant Pot Country Style Ribs are also amazing! You will need to add the sauce and 1 cup of broth as you can’t cook them dry in the Instant Pot. Cook boneless pork on Pressure Cooker/High 40 min/ natural release.
FAQs and Hot Tips
Absolutely! Freeze uncooked or cooked. It is better to freeze raw.
Use the same temperatures as the air fryer. Preheat the oven and bake on an oven tray turning after the first 15 minutes and cooking until cooked through.
Use any seasoning you like, but I really recommend trying the mix in the recipe. It really is awesome!
Variations
- I have used pork scotch in this recipe. Also known as pork neck, pork butt or shoulder but. You can use pork spareribs, pork belly, or even bone-in ribs like baby back ribs, or full rack ribs.
- Substitute chicken thighs, drumsticks or wings.
- Beef or Lamb – If using beef, choose a budget cut like chuck, brisket or even rump (picanha). It takes about 35 minutes in the smoker to reach 60°C for a medium-rare finish.
- Seafood – perfect with a thick-cut fillet of salmon, trout or large white fish like swordfish or tuna.
What to serve with Boneless Pork Ribs?
I love a good salad like our Taboule or Roast Pumpkin Salad. A good creamy sauce like our Ranch Dressing, Easy Garlic Kebab Sauce or a herby sauce like Chimichurri pair perfectly with pork ribs.

Country Style Boneless Pork Ribs

- 1 kg (2 lb) pork scotch fillet
- 3 tablespoons (3 tablespoons) Mad Creations Rib Rub click for recipe
- 1 tablespoon (1 tablespoon) Mad Creation Chicken Smoker Rub click for recipe
- 1/2 cup (0.5 cup) Mad Creations BBQ Sauce click for recipe
Instructions
AIR FRYER METHOD
- Slice the pork fillet into long thick strips (similar in size to a pork rib). Combine the rub and smoker rub in a small bowl. Sprinkle over the pork and rub to coat the meat completely. Add more seasoning if you need it.
- Place the pork strips into the air fryer basket. You will see in my picture above that I do have pork in 2 layers. Set the air fryer to 15 minutes/170°C(340°F).
- Turn the pork over at this stage moving any pork on the bottom to the top layer. Cook for a further 10 minutes/170°C(340°F).
- Baste the pork with the barbecue sauce. Cook for a remaining 5-10 min/170°C(340°F) or until cooked to your liking. Serve with extra sauce for dipping.
BAKED IN THE OVEN – Tender Ribs
- Preheat the oven to 170°C (340°F). Slice the pork fillet into long thick strips (similar in size to a pork rib). Combine the rub and smoker rub in a small bowl. Sprinkle over the pork and rub to coat the meat completely. Add more seasoning if you need it. Place the “ribs” into a 33cm 23cm (13″x 9″) baking tray. Cover with foil.
- Bake for 60 min – 90 mins or until tender. Remove the foil and baste with barbecue sauce. Turn the oven temp up to 220°C/(430°F) and cook for 5-15 minutes turning them to brown both sides. (This can also be done under the grill to brown the ribs nicely). Serve with extra sauce for dipping.
SMOKER METHOD
- Set up the smoker to reach a consistent 105°C (225°F) heat using any wood of choice. (Takes about 20 minutes)
- Slice the pork fillet into long thick strips (similar in size to a pork rib). Combine the rub and smoker rub in a small bowl. Sprinkle over the pork and rub to coat the meat completely. Add more seasoning if you need it.
- Place the pork strips directly onto the smoker grill on indirect heat. Cooking time can range for 60-75 minutes, but you are looking for an internal temperature of 70°C(160°F).
- Remove the pork and place into a pan or foil tray. Baste the pork with the barbecue sauce. Adjust the smoker to 135°C (275°F). Cook for 1-2 hours or until an internal temp of 95°C (200°F) is reached. Remove from the smoker; rest for 10 minutes. Serve with extra sauce for dipping.
