It’s dairy free! I constantly get asked for more dairy free keto recipes. This delicious healthy gravy has no butter or cream. You can add it if you want but it doesn’t need it. If you would like extra fats use extra dripping from turkey, chicken, beef etc.
Versatile – Use whichever broth you prefer; and the drippings from a roast chicken. Use turkey drippings to make an awesome keto turkey gravy for Thanksgiving or Christmas.
Thermomix Friendly – making my low carb gravy in the Thermomix is super easy too, and is a great basic recipe to add to my collection of keto Thermomix recipes.

There are just 2 simple ingredients you will need:
Broth – You can use any broth you prefer; my bone broth makes a delicious gravy!
Glucomannan powder or xanthan gum – these keto friendly thickening agents will usually be part of your keto pantry staples. Both help to thicken gravy. Seeing we don’t eat cornstarch either of these ingredients will thicken without adding extra carbs.
Collagen is added as an optional extra. I like how it helps to thicken naturally and adds an almost creamy texture to the gravy.
How To Make Low Carb Gravy
You can choose to make gravy in a saucepan on a stovetop, or in a Thermomix, Magimix or similar thermal-cooker.
Chef’s Tip:
Keep whisking continuously if making this in a saucepan, and don’t leave the gravy unattended while on the heat. It helps to keep the consistency smooth if you are whisking and taking note of the thickening.
Step 1: If you are making this to accompany a roast, pour pan juices from the roast into a small saucepan over medium heat. Add the broth and glucomannan powder.
Step 2. Bring to a simmer and whisk until it thickens to a perfect keto gravy. Serve with a Sunday roast or whatever you love.
How to Make Gravy In a Thermomix
Step 1: Insert whisk attachment. Add ingredients to mixing bowl. Cook 6 min/120 ̊C/speed 2/cap off.

This recipe is suitable to be made in a larger batch if preferred. You can double the recipe if you have a large family.
The gravy can be stored in an airtight container in the fridge for up to 2 days. You can also freeze it, in individual portions if preferred.
I guess it depends on what you think is low carb. Most packet regular gravies are around 3-5g net carbs per serve. However, have lots of additives and thickeners that are not considered keto-friendly by most.
This recipe does give you the option of glucomannan powder. It is my preferred way to thicken. Other thickeners can also include gelatin (which works well) and by adding more collagen powder as well. You can reduce the gravy and or add mashed vegetable or cream to thicken it.

Ingredients
- 1 cup (1 cup) beef broth (250g) or 1 stock cube in 1 cup of water
- 0.5 teaspoon (0.5 teaspoon) glucomannan powder xanthan gum or 1 tablespoon beef gelatin
- 1 tablespoon (1 tablespoon) collagen optional
- Salt and pepper to taste
Instructions
CONVENTIONAL METHOD
- Add all the ingredients into the pan over moderate heat. Cook stirring until the gravy thickens. Remove from heat once the gravy has thickened. Season to taste and serve.
- Alternative cooking method. If you have prepared a roast, use the pan and drippings for extra flavour. Simply remove the roast from the pan and place the pan over moderate heat. Add all the ingredients to the pan and cook stirring until thickened. Make sure you use a spatula to scrape all the good stuff off the bottom of the pan into the gravy.
THERMAL METHOD
- Place all the ingredients into mixer; mix 20 sec/speed 4.
- Cook 6 min/120°C/speed 2/cap off. Extend cooking time if required. Season to taste and serve.
Notes
For a vegetarian and keto vegan version omit the collagen and use a vegetable broth. SERVING SUGGESTIONS Best cooked and served as needed. Serve with roast meats and vegetables. It is the perfect keto gravy for biscuits or on a pile of cauliflower mash.To reheat, cook in a small pan over low heat whisking until warmed through. COOKING METHODS I have given both cooktop and Thermomix cooking methods for the carb free gravy. You could indeed make this in the Instant Pot, Ninja, Crockpot or slow cooker. It won’t take much heating, but that is totally up to you. STORAGE Store in the fridge for up to 5 days. Freeze and defrost in the fridge as needed. SERVING SIZES This recipe yields approximately 4 serves. The actual number of servings will depend on your preferred portion sizes. SERVING SIZE BY WEIGHT To calculate the weight of one serving, prepare the recipe as instructed. Weigh the finished recipe, then divide the weight of the finished recipe by 4. The result will be the weight of one serving. NUTRITIONAL VALUES Nutritional values shown are guidelines only. Actual macros may vary slightly depending on types of ingredients used.
