Kid friendly – this is a perfect meal for kids lunches or dinners. Zucchini has very little flavour and it is a great way to add hidden vegetables into kids diet.

Gluten free – I follow a low carb keto lifestyle so this zucchini slice is made with no flour. It is gluten-free, grain-free and a diabetic-friendly meal.

Keto friendly – Leaving out the flour also makes this an easy keto recipe perfect for any time of the day.

Versatile – this recipe can be baked in the oven or air fryer. It has been tested on a barbecue and in a waffle maker. You can add more spices and make it gourmet or simple 4 ingredient zucchini slice. It is just so easy to make different each time. Experiment and find your favourites.

What is Zucchini Slice?

A zucchini slice might also be referred to as impossible quiche, zucchini frittata, or crustless quiche. Usually, a quiche has more dairy like cream or sour cream added to the eggs and a frittata has less dairy and more filling.

The differences are only subtle, but here in Australia most of us have enjoyed a zucchini slice at some point in time.

Zucchini Slice Ingredients

Bacon – I use rindless bacon or trim the rind off for this recipe. Seeing that the bacon is not cooked until crispy I would prefer not to be chewing on rubbery rind in the slice. The bacon can be left out for a vegetarian zucchini slice.

Zucchini – I do grate the zucchini and prefer to do this by hand even if using the Thermomix. I squeeze out the excess water so the slice is not too wet or watery. I have tested the recipe without squeezing and with and I much prefer it with it squeezed. Slicing zucchini into ribbons or using a spiraliser to make spiralised zucchini noodles is a great way to change up the look and texture of the slice too.

Hemp seeds – the hemp seeds are a great alternative for the usual plain or self raising flour in a recipe for zucchini slice. They help absorb excess moistureThey are optional in this recipe. Some keto zucchini slice recipes use almond meal or almond flour in place of flour but I find no need for it.

Cheddar – I sometimes make this one cup grated cheddar cheese and a quarter cup of parmesan for extra flavour. You can use any cheese you love. Our original recipe in Lunch Time Keto uses cheddar, parmesan and feta.

Seasoning – season well with salt and pepper. You can also add any extra spices you like. I did add an optional Ranch Seasoning to this recipe, but a zucchini slice with curry powder is always popular, or add in some chilli flakes or a bit of lemon pepper, whatever you prefer!

How To Make It

Step 1. Preheat oven to 170 ̊C/375°F. Line a 26cm x 20cm (10″ x 8″) baking dish with baking paper. Dice the onion and bacon. Heat the oil in a large skillet over medium-high heat. Add the bacon and onion; sauté until lightly golden. Transfer to a large mixing bowl.

Step 2. Place the grated zucchini between paper towels or a clean kitchen cloth. Squeeze the water from the zucchini and discard. Place into the bowl with the bacon. Add remaining ingredients, season well, and mix to combine.

Step 3. Pour into the prepared baking dish. Bake for 35-40 minutes or until cooked through.

Thermomix Zucchini Slice

Making our gluten free zucchini slice in the Thermomix is so easy. The full method is on the printable recipe card below. I have included cooking the bacon and onion in the mixer, but if you prefer to fry them in a skillet first then add to the mixer then go for it.

This recipe is also suitable to be made in any thermal cooker such as the Magimix, Intelli Smith and Noble etc. It can be doubled or halved. You could even steam it whole or in a silicone mould in your mixer too. That would be perfect for those of you who take your Thermomix camping or caravanning too.

Variations

Vegetarian Zucchini Slice – leave out the bacon. I also love grated pumpkin in this recipe. No need to cook it, just grated or spiralise pumpkin or squash (or even spaghetti squash noodles) and fold it in before baking.

Zucchini Slice without flour – this is also a great keto zucchini slice recipe. No flour is needed at all.

Gourmet Zucchini Slice –  to totally pimp your zucchini slice add some garlic, chili powder (or fresh chillies), extra spiralised vegetables, goats curd, chorizo, pancetta and so much more. 

Zucchini Waffles, Zucchini Chaffles, and Zucchini Muffins – there are so many other ways you could make and bake this easy zucchini slice recipe. FAQs

Is Zucchini Slice suitable to freeze?

It sure is. Store in a ziplock bag in individual portions. Defrost in the fridge overnight.

Do I need to squeeze the zucchini before adding?

I have made the recipe both ways and it is a little “wet” if the zucchini is not squeezed. This is different to a traditional zucchini slice made with plain flour as the flour absorbs the zucchini juices. Squeezing out the zucchini will help give the slice more stability.

Can I cook zucchini slice in a slow cooker?

Yes, you can. Spray and line the slow cooker (or use a silicone dish that fits your slow cooker). Pour the mixture in and cook on high for 1-2 hours.

What To Serve With It

The slice is perfect just on its own. Serve with a light salad for an easy meal, or add it to a bigger salad like our Keto Roasted Pumpkin Salad with Lemon Yogurt for something more substantial.

Ingredients 

  • 1/2 (1/2) onion
  • 4 rashers (4 rashers) streaky rindless bacon or leftover ham diced into small cubes

CONVENTIONAL METHOD

  • Dice the onion and bacon. Heat the oil in a large skillet over medium-high heat. Add the bacon and onion; sauté until lightly golden. Transfer to a large mixing bowl.
  • Place the grated zucchini between paper towels or a clean kitchen cloth. Squeeze the water from the zucchini and discard. Place into the bowl with the bacon. Add remaining ingredients, season well, and mix to combine. Pour into the prepared baking dish. Bake for 35-40 minutes or until cooked through.

THERMAL METHOD

  • Preheat the oven to 170 ̊C/375°F. Line a 26cm x 20cm (10″ x 8″) baking dish with baking paper.
  • (Pre-grate the zucchini – place roughly chopped zucchini into the mixer; chop 4 sec/speed 4. Place the grated zucchini between paper towels or a clean kitchen cloth. Squeeze the water from the zucchini and discard.)
  • Place the onion, bacon, and oil into the mixer; chop 4 sec/speed 4. Scrape down the sides of the bowl; cook 4 min/120°C/reverse/speed 1.
  • Add the remaining ingredients, season well; mix 5 sec/speed 4. Pour into the prepared baking dish. Bake for 35-40 minutes or until cooked through.

Notes

To calculate the weight of one serving, prepare the recipe as instructed. Weigh the finished recipe, then divide the weight of the finished recipe by 6-8. The result will be the weight of one serving.

    Megan this is the most delicious zucchini slice I have ever made. For over 30 years I have had a favourite recipe I always used, but this recipe is out of this world.     Wow! Sooooo gooood!! The first time I made this, I didn’t have any onions, so I subbed 1 tblsp of dried onion flakes and let them sit in the egg mix for about 10 mins to hydrate and moisten them. It was a good sub and one I’ll keep in mind for future. For the second one, I had brown onion… next – level – WOW! I served it with a crisp savvy blanc 😉 Definitely the best keto zucchini slice ever!
