Homemade Mayonnaise
Mayonnaise is a staple keto condiments recipe that is super easy to make. Homemade keto mayo is so much better than store bought mayo. I love that I know exactly what has gone into it when I make my own.
Most mayonnaise recipes are naturally low in carbs as they should basically contain eggs, oil and acid (in the form of vinegar or lemon juice).
Making an easy, no sugar mayonnaise is just that, easy! It is cheap and tastes so much better. Plus, you can use it for low carb sauce recipes and keto dressings. You can make amazing Keto Ranch Dressing, Keto Blue Cheese Dressing, or even your own Copycat chick fil a sauce recipe with keto mayo.

No sugar! Mayonnaise that is commercially produced usually has sugar added to it, along with lots of other additives; and you don’t need any of that!
Quick and easy – this recipe takes hardly any time to make, so you can make fresh keto mayonnaise with whatever flavour variation you choose.
Keeps for a few days – it is safe to store keto mayonnaise in an airtight container in the fridge for 5-7 days.

There are just 4 main ingredients in this easy keto mayo recipe.
Oil: I use neutral-tasting olive oil, avocado oil or fractionated coconut oil. Neutral taste olive oil is NOT extra virgin olive oil. Please use light olive oil or neutral oil.
You can make avocado oil mayo but check the avocado oil first. Some are quite robust in flavour so look for a mild-tasting one. Fractionated coconut oil is liquid coconut oil or MCT oil. This is perfect for bulletproof mayonnaise.
Eggs: I use fresh free-range, room temperature egg yolks. The eggs are not cooked in this recipe. If you have concerns over salmonella then please use pasteurised eggs or whisk the mayonnaise over a gentle heat for a cooked mayonnaise.
Apple cider vinegar or lemon juice: the acid in vinegar or lemon juice helps to emulsify the mayo.
How To Make Keto Mayonnaise
Step 1: Mix the room temperature egg yolk, vinegar/lemon juice and mustard together. You can do this with a whisk, food processor, blender, or with a stick blender in a suitable container.
Step 2: While whisking or blending, slowly drizzle the oil in a thin stream until the mayonnaise emulsifies.

Hot Tips & FAQs
Oil choice is very important in making mayonnaise. You want to choose oils that are not strong in flavour. The light olive oil is not the same as virgin or extra virgin. It has more of a neutral flavour and won’t dominate the mayonnaise. Extra virgin olive oil is not recommended.
Whether making mayonnaise with a whisk, stick blender or Thermomix® the trick is to add the oil in a slow steady stream to slowly emulsify the mayonnaise. If you add it too fast, it doesn’t come together properly. As you are whisking or blending the egg mix, the slow stream of oil will slowly help to form a thick delicious consistency.
How to Fix Broken Mayonnaise
I have 3 tips to fix mayonnaise that is broken or is too thin.
- Whisk in two teaspoons of boiling water. This will help the yolks to re-emulsify with the oil, bringing the mayo back together. If it still is not thick add 1-2 more teaspoons to thicken.
- Whisk in 1 teaspoon of extra mustard to the broken mayonnaise until it emulsifies and thickens.
- Add another egg yolk and whisk (or process) until thick.
How to Make Mayonnaise in the Thermomix
It is super simple to make mayonnaise in the Thermomix. The additional benefit is if you would prefer a cooked mayonnaise too. I have included a method to make our easy keto mayonnaise in the thermie. If you would prefer to cook your mayonnaise; add the eggs, mustard and vinegar/juice; set the mixer to 4 min/37°C/speed 4. In the last minute or so begin to pour the oil and mix until thick and emulsified.

Easy Keto Mayonnaise

Ingredients
- 1 (1) egg yolk
- 2 teaspoons (2 teaspoons) apple cider vinegar or lemon juice
- 1 tablespoon (1 tablespoon) Dijon mustard
- 1 cup (1 cup) light taste olive oil or avocado oil
- Salt and pepper
Instructions
CONVENTIONAL METHOD
- Mix egg, vinegar and mustard in a blender or with stick blender.
- Add oil in a thin stream with blender running slowly until mayonnaise emulsifies and thickens. Season with salt and pepper.
THERMOMIX METHOD
- Insert the whisk attachment. Add egg yolk, vinegar and mustard; mix 20 sec/speed 4.
- Set mixer to 3 min/speed 4. With the measuring cup in place, slowly pour the oil in a steady stream onto the lid, while the blades are rotating. You will hear when the mix has emulsified and thickened. Season with salt and pepper.

Mayo is so easy to make from scratch! And it’s so much more delicious than the storebought stuff–it’s an entirely different condiment if you ask me. I always make mine with lemon juice but went with your suggestion and used apple cider vinegar in my last batch. I liked the zingy flavor, will keep this tip in mind!Thanks
