What is Keto Soul Bread?

Keto Soul Bread is a low-carb, high protein bread recipe (almost carnivore bread) that’s soft, fluffy, and perfect for sandwiches, toast, or simply slathering with butter. Unlike traditional keto breads that rely on almond or coconut flour, this recipe uses whey protein isolate as the primary dry ingredient, giving it an ultra-light texture without the grainy bite. It’s a fantastic option for those who prefer a nut-free, flourless keto bread that is best for sandwiches and grilled cheese toasties.

Why This Recipe is Better Than Others

Many keto bread recipes can be dense, eggy, or dry. This recipe avoids all of that by balancing fats, and protein. The result? A light, airy loaf with a perfect chew and no funky aftertaste. Plus, it’s super easy to make with basic ingredients and no fancy techniques. We did do another variation of this protein bread with our F.U.Bread in Fed Up Fast 4.0 Meal Plans and ebook. It is equally as awesome too!

This recipe is just a simple adaptation of Souls Song – Soul Bread.

The Ingredients

  • Butter → Use ghee or coconut oil if you prefer.
  • Cream Cheese → We have tried a lot of substitutes but nothing works quite the same as cream cheese. You can use low fat and lactose free cream cheese, but any dairy free options we tried changed the texture very significantly.
  • Xanthan Gum → Is essential for texture in this recipe.
  • Whey Protein Isolate → Egg white powder can be substituted for half the WPI. It is a great way to reduce the dairy if needed. The consistency of the bread will change somewhat. When made completely with EWP I have found it doesn’t work. It sucks in at the sides and you end up with a weird loaf. It could be me, but I don’t recommend it.
  • Thickened Cream → Swap for sour cream

Pro Tips for Perfect Keto Soul Bread

Store Properly – Wrap in plastic and refrigerate for up to 5 days or freeze in slices.

Don’t Overmix – Stir gently when combining wet and dry ingredients.

Use a Metal Loaf TinChoosing the right baking pan for low carb bread recipes hhelps with even baking and prevents soggy bottoms. Using a metal baking dish helps with the heat conductivity and results in a better rise.

Let it Cool Fully – Keto bread sets as it cools, so slice only when completely cooled.

How To Make It

Step 1: Melt butter and cream cheese together. Stir until smooth.
Step 2: Whisk eggs, oil, and cream into the melted mixture.
Step 3: Mix all dry ingredients in a separate bowl.
Step 4: Fold wet ingredients into dry until just combined.
Step 5: Pour into the loaf pan and smooth the top.
Step 6: Bake at 160°C fan for 45 minutes or until golden.
Step 7: Cool completely before slicing.

Other Ways To Make it

Waffle Maker – Spoon batter into a mini waffle iron for quick flourless protein bread waffles.

Oven (Standard Recipe) – Bakes for 45 minutes at 160°C fan/180°C static/350°F.

Air Fryer – Bake at 160°C (320°F) for 30-35 minutes in a small loaf tin.

Mini Loaves or Muffins – Divide batter into muffin tins and bake at 160°C for 20-25 minutes.

How to Serve Soul Bread

French Toast – Dip slices in egg and cinnamon mix for a breakfast treat.

Savoury – Toast with butter, cream cheese, or avocado. Try it topped with homemade baked beans, savoury mince, or an easy lamb mince ragu. Make it a meal! Oh, a keto smashed avocado toast! Piled high with guacamole, scrambled eggs and shaved parmesan! 😋

Sweet – Spread with sugar-free jam or cinnamon butter.

Sandwiches – Perfect for grilled cheese or low-carb BLTs.

Croutons – Cube and bake for crispy keto croutons. Or process for easy keto bread crumbs!

Variations of Keto Soul Bread

Everything Bagel Bread – Sprinkle with Everything Bagel Seasoning before baking for a deli-style loaf.

Cheese and Bacon Herb Bread – Add grated cheddar cheese, fresh herbs, and cooked diced bacon. This is a big favourite here! You can also cook the bread in a silicone hamburger bun pan and top with cheese and bacon for some super-tasty rolls!

Cinnamon Swirl Bread – Mix in cinnamon and a little extra sweetener. Add a drizzle of keto glaze, and you are really in the tasty business!

Seeded Protein Bread – Stir in chia, sesame, or sunflower seeds for extra crunch and nutrients.

Italian Herb Bread – Add dried oregano, basil, and a touch of parmesan to pair with soups or salads.

Frequently Asked Questions

Try using room-temperature eggs and balancing with a little sweetener or spices. This recipe has a great balance, but for extra mildness, use vanilla extract or a pinch of ginger powder or mustard powder.

I have tested this recipe without them and the texture is not the same. Both of these ingredients help create structure to the bread. This is a flourless keto protein bread that is gluten free. It needs all the help to ensure it rises and has structure.

This recipe is suitable for buns, rolls, or flatbread. It will need to be poured into moulds though as the mixture is a batter, and not a dough.

CONVENTIONAL METHOD

  • Preheat oven to 160℃ fan/180°C static/350°F. Spray and line a 22cm x 11cm (9 x4 inch) loaf tin.
  • Microwave butter and cream cheese on high for 30-60 seconds to melt and combine.
  • Whisk in eggs, oil, cream, and baking powder. Set aside.
  • In a separate large mixing bowl; combine whey protein, xanthan gum, salt and cream of tartar.
  • Pour the egg mixture in and gently fold until combined. Do not whip or beat. Pour into the baking pan.
  • Bake for 45 minutes. Remove the loaf from the pan immediately. Cool completely on wire rack. Slice and serve when completely cooled.

THERMAL METHOD

  • Preheat oven to 160℃ fan/180°C static/350°F. Spray and line a 22cm x 11cm (9 x4 inch) loaf tin.
  • Add butter and cream cheese to mixer; cook 2 min/120°C/speed 1. Mix 30 sec/speed 5
  • Add eggs, oil, cream, and baking powder; mix 30 sec/speed 4. Scrape down sides of bowl.
  • In a separate large mixing bowl; combine whey protein, xanthan gum, salt and cream of tartar.
  • Pour the egg mixture in and gently fold until combined. Do not whip or beat. Pour into the baking pan.
  • Bake for 45 minutes. Remove the loaf from the pan immediately. Cool completely on wire rack. Slice and serve when completely cooled.

Notes

INGREDIENTS
WPI, or whey protein isolate, is often used in baking for its high protein content and its ability to improve the texture and structure of baked goods. It helps to give baked goods a lighter, fluffier texture, especially in low-carb or gluten-free recipes. Additionally, WPI helps to increase the protein content of baked goods, which can be beneficial for those following a high-protein diet. 
WPI swaps – Using egg white protein powder as an ingredient swaps in the keto soul bread recipe is a great way to reduce the dairy if needed. The consistency of the bread will change somewhat but if for some reason you cannot have whey it is an option. I have not tested this recipe with vegan options.
Cream cheese – you can use low fat cream cheese or lactose free cream cheese in this recipe. At a guess, cottage cheese or quark that has been strained could be used, but at this time, it has not been tested.
This is a nut free keto bread recipe that is perfect for school lunches. 
STORAGE
Store in the fridge for up to 3 days. Alternatively, slice the Soul Bread before placing into an airtight container and freezing. The bread can be toasted straight from the freezer or defrosted overnight.

    I am very new to the low-carb or keto diet and I’m very sorry these are stupid questions I have not tried the bread yet but I really want to I do not have the whey powder do you have to use it or what can I substitute for it and can I use this recipe in a bread machine

      Hi Maria, yes you need the WPI powder and no there is no substitute for it in this loaf. Also, because the bread has no yeast or gluten it is not suitable for the bread maker sorry.

    This bread is the closest thing to white bread !! I slice it and freeze it in individual slices and it defrosts well and is also delicious toasted. It is great to have a sandwich or even better a toasted sandwich. It’s one delicious versatile loaf of bread .
