It’s creamy, tangy, and packed with all the classic flavours we love in a real potato salad, but with a clever keto twist. Cauliflower is the perfect dupe for real potatoes. Keeping the carbs low and a vegetable that takes on the creamy ranch dressing flavours so well! This recipe is definitely a great one! A truly loaded cauliflower salad! Serve it hot or cold. This recipe ticks all the boxes. It’s creamy, delicious, and so versatile. I love how easy it is to throw together, and it’s always a crowd-pleaser. Plus, it’s proof that going low-carb doesn’t mean missing out on comfort food classics.

The Ingredients

  • Cauliflower: Steam or microwave the florets until tender but not mushy. Roasting is another option for added depth.
  • Dressing: I use homemade ranch dressing for this recipe. You can use store bought or make it from scratch. Use full-fat mayonnaise for the best creaminess. You can substitute with Greek yogurt for a tangier flavour. To make it dairy free, leave out the sour cream and cream cheese. Use the ranch dressing only.
  • Herbs: Fresh parsley or dill enhances the flavour. Dried herbs can be used in a pinch but use half the amount.
  • Eggs: For perfectly boiled eggs, simmer them for 8–9 minutes and transfer immediately to an ice bath to cool.
  • Crunch Factor: Add diced celery, red onion or chopped dill pickles for a delightful crunch. I love crispy salty bacon for added crunch in my mock potato salad.

How to Make Low Carb Potato Salad

Step 1. Chop into florets. Cut the core into small pieces too. No need to waste any of the cauliflower.

Step 2. Steam the cauliflower in a double boiler until just softened. Alternatively, steam cauliflower in the Thermomix / 15 minutes/120°C/speed 2.

Step 3. While the cauliflower is steaming, hard boil the eggs and cook bacon.

Step 4. Chill cauliflower before combining with the remaining ingredients in a large mixing bowl.

Step 5. Combine remaining ingredients in a large bowl. Stir through cooled cauliflower. Season with salt flakes and black pepper. Serve hot or cold.

Alternative Hot Cauliflower Potato Salad: If you want it more like a keto potato bake, preheat oven to 180℃. Mix all ingredients, reserving half the cheese. Transfer to baking dish and sprinkle with reserved cheese. Bake for 20-25 minutes or until it is hot and nice and golden on top.

Frozen cauliflower does hold extra water. Pat dry with towels and if you wish to steam, steam for less time as frozen vegetables tend to go mushier than fresh.

Ingredients 

  • 450 g (1 lb) cauliflower cut into florets
  • 30 g (2 tbsp) cream cheese softened
  • 1/4 cup sour cream or thickened cream
  • 1/4 cup Ranch Dressing click link for recipe
  • 1/4 cup shredded cheddar cheese
  • 3 slices streaky bacon sliced and cooked until crispy
  • 2 hard boiled eggs diced
  • 2 tablespoons fresh chives finely sliced

Instructions

CONVENTIONAL METHOD

  • Steam cauliflower for 10-15 minutes. Alternatively, place into microwave-safe dish and add a couple of tablespoons of water. Cover with cling film and cook on high for 10-15 minutes, or until just tender. Allow to cool.
  • Combine remaining ingredients in a large bowl. Stir through cooled cauliflower. Serve

THERMAL METHOD

  • Pour 600g of water into mixing bowl and insert the steaming basket. Place cauliflower florets into basket. Steam 15 min/120°C/speed 2. Set aside to cool. Discard water.
  • Place the cream cheese, sour cream, and ranch dressing into mixing bowl. Mix 15 sec/speed 4. Scrape and repeat if needed. Pour cream mixture over cauliflower and stir through cheese, bacon, egg and chives. Serve.
