It’s funny how much this easy keto custard recipe reminds me of my childhood. Not that I was making their own but I do remember me and my brothers drinking a lot of vanilla custard out of a carton. 😂

I love the pure simplicity that this 4-ingredient keto custard is not only easy but honestly tastes so delicious.

Read on to learn how to make it with our two easy to follow methods. Plus I have some tips on how to use it in other low carb dessert recipes as well.

WHAT YOU NEED TO MAKE THIS RECIPE

Traditional custard recipes are very simple and this one is too. You will find the ingredients in your keto pantry now, or from the local supermarket. Personally I do have a preference for powdered sweetener from Sukrin Australia, you can however use Natvia from your local supermarket as well.

HOW TO MAKE LOW CARB CUSTARD

It is super easy to make this sugar free vanilla custard. Essentially it is no different to any other custard recipe other than we are not using sugar. I have included steps for a keto Thermomix custard recipe as well for all our thermal cooks.

Apart from the steps below there is a few things to be careful of making this easy keto custard.

Firstly, temperature is very important. When cooking with the stove top custard method be careful to keep the temperature low. A custard is mainly eggs and if you overheat will end up with an eggy custard or worse still scrambled eggs.

Secondly, keep whisking and don’t leave a custard when on the heat. It helps to keep the consistency smooth if you are whisking and taking note of the thickening of the keto custard.

CONVENTIONAL METHOD

  • Add cream and vanilla to a small saucepan. Whisk mixture over medium heat until a low simmer and remove from heat.
  • In a separate bowl whisk together sweetener and eggs. Stir through cream mixture and return to heat and continue whisking until the mixture thickens and coats the back of a spoon. Remove from heat and allow to cool.
  • If making Pastry Cream; whisk through butter and xanthan gum after taking off the heat. Push through a sieve to remove any lumps. Leave to cool at room temperature then press cling film over surface of pastry cream and transfer to the fridge. Refrigerate 2-3 hours.

THERMAL METHOD

  • Insert Butterfly. Add all ingredients to mixing bowl. Cook 9 min/90 ̊C/speed 4. For Pastry Cream follow from Step 3 above.

WAYS TO USE LOW CARB CUSTARD

I have already used the custard in so many recipes at home. One day I will release the delicious keto mud cake I have created. It is topped with this custard, but it has had mint and my Hot Chocolate Powder from The Healthy Family Keto Cookbook. It honestly tastes like the lightest mousse ever! But anyway, here are a few ways to include the custard in other recipes.

  1. This recipe is suitable to be made in larger batches if preferred. You can double, triple quadruple if you have a large family or would like to use it a larger dessert or ice cream.
  2. Essentially a custard is an egg based ice cream as well. So this can be frozen and blended to create a delicious keto custard ice cream or soft serve custard. Mix in any “extras” like choc chips, crushed keto biscuits or ay extracts to flavour the custard.
  3. Pour it into a keto shortcrust pastry shell and refrigerate until set. This custard will set slightly firm when refrigerated overnight.
  4. Add to a smoothie with some low carb berries.
  5. Serve over keto desserts like Faux Apple Crumble, Chocolate Bavarian Pie or Paleo Chocolate Cake. It also goes great with a simple jelly or low carb berries.
  6. Set in small ramekins or jars. Sprinkle with powdered erythritol. Using a butane torch caramelise the sweetener until you have a crisp toffee bark. The perfect Keto Créme Brulée recipe.

Add 2tbsp cacao or zero carb hot chocolate powder for a chocolate custard.
Dairy Free
For a dairy free keto custard exchange thicken cream with coconut cream.
