My Bread Maker Review
Let’s have a little look at some of the features of the SD- ZP2000. As I mentioned I was intrigued that a bread maker could create a delicious artisan-style crust on a loaf. I think most of you know me now as a pretty honest kind of cook and blogger.
I also get a lot of questions asking how the recipes go in a bread maker and to be honest I had not had one in such a long time. The timing was perfect and the additional features of Panasonic’s Bread Maker seemed more geared to our keto lifestyle and cooking needs.
The Panasonic Hard Crust Bread Maker
Panasonic has been creating bread makers and helping us with baking for 30 years. The hard crust bread maker has 18 baking functions and several key features that work well for low carb and gluten-free baking.
For a bread maker low carb bread you can actually use 7 functions for a Hard Crust Bake. Hello crusty bread, with choice!
There is also a Bake Function for softer loaves including a Brioche, which I have also tested and love! Haha! Yes I will have a recipe up soon, but seriously another winner in my opinion.
Other functions include Gluten Free Bread, Gluten Free Cake, Bread Dough, Pizza Dough and Jam! Pretty cool for keto and low carb followers for sure.

How to Make it
The good thing is using a bread maker to bake bread means less time for you preparing it. With most recipes it is simply placing them into the bread pan in order, selecting your bread baking style you want and pressing start.
In most of my bread recipes I do always use a yeast starter. Mixing the yeast, inulin and warm water help get a head start on the yeast activation and a better overall rise. It can be hard using flours that are not all geared towards strong gluten development.
I chop olives and feta, I already have my yeast mixed and covered and activating before pouring into the bread pan. You can completely omit this step, and just add it directly, but I find it just gives a higher rise to my loaf. After that, I just add everything in order to the bread pan and select my function.

Once the loaf is baked simply tip the bread out of the pan onto a wire rack. Be careful and use an oven mitt as the pan will hot. No burned fingers on my watch!
The Ingredients
There are a few substitutes you can use for the bread maker low carb bread.
Inulin Naturally low carb, inulin works great to activate the yeast. If you would prefer to use sugar or honey both can be used. The yeast will consume the carbohydrate value. Sweeteners however will not work otherwise.
Eggs should always be at room temperature when baking. This helps keep the mix temperate without affecting the yeast rise and gives a far better result in baking than cold eggs. To warm an egg from the fridge place it into warm water for 20 minutes until warm.
Chia Flour. I use freshly milled white chia seeds. You can purchase chia flour from specialty stores and some Coles supermarkets. Golden flax meal can also be substituted.
Macro Gentle Fibre – this product is available from Woolworths. A combination of oat flour, linseeds and psyllium seeds and psyllium husks.
Gluten Flour – is available from most health shops and good markets. Gluten flour is a higher gluten concentrate flour with lower fructans than strong bread flours.

Bread Maker Low Carb Bread

Ingredients
- 1 cup (1 cup) warm water
- 2 tbsp (2 tbsp) inulin or 1 tbsp honey or sugar
- 1 tbsp (1 tbsp) instant yeast
- 2 (2) eggs lightly whisked
- 60 g (¼ cups) butter cubed
- 2/3 cup (⅔ cup) chia flour (70g)
- 1/2 cup (½ cup) Macro Gentle Fibre (50g)
- 1 1/4 cups (1 ¼ cups) Gluten Flour (170g)
- Pinch (Pinch) salt flakes
- 1/2 tsp (½ tsp) xanthan gum
FILLING
- 180 g (1 ⅕ cups) feta cheese cut into 1 cm cubes
- 180 g (1 ⅓ cups) kalamata olives pitted and roughly chopped
- 1 tbsp (1 tbsp) fresh parsley finely chopped (optional)
Instructions
- Remove Bread Pan from Bread Maker. Check that the kneading blade placed in position in the base of the pan.
- Combine warm water, inulin (or sweetener) and yeast into a small bowl and mix until foamy. Pour into bread pan.
- Add remaining bread ingredients in ingredients order into bread pan and place back into Bread Maker.
- Select Menu 3 – White Stuffed Bread and press Start.
- After about 20-25 minutes you will hear a beeping sound. Add the feta, kalamata olives and parsley to pan and close lid. Press start to continue.
- When the Bread Maker beeps next it is time to turn it off and remove your bread. Use oven mit as the bread pan will be hot. Turn the bread out of pan. It should pop out easily. Leave to cool on a wire rack completely before slicing.

Notes
- Allow bread to cool completely before storing in an airtight container, this will help maintain the delicious hard crust on the loaf.
- Greek Feta & Olive Bread should be stored in the fridge for up to 3 days or sliced and frozen for your convenience.
- Olives can be chopped chunky or fine it is a personal choice.
- Substitute any firm cheese and herbs of choice for tasty variations.

I made this and decided I wouldn’t put in the olives or cheese. I just wanted a basic loaf.
I didn’t have quite enough Gluten flour so made it up with almond flour. I also didn’t have quite enough butter (!) so made it up with olive oil. I had no gentle fibre and it is extremely expensive here in the UK so made with oat fibre and I had to make my own chia flour. You can tell I wasn’t very well prepared really.
My bread maker only does one knead on basic so I took paddle out after the knead and gave it a good old knead myself as it looked strange. Once it looked vaguely bread like I put it back and let the bread maker do its thing.
At the end of baking I had no great hope but thought I would let it cool and try it anyway. It hadn’t risen much and the only description I can give it is ‘rustic’.
It was freaking delicious! Crusty but soft inside. The colour of rye bread but not the taste. A proper bread taste. I love it and believe me, after so many recipes I have tried out this is a revelation! Try it, muck around with it, substitute a little if you must like I did. I don’t think you will be disappointed.

Hi Iโm wanting to use your gluten flour low carb bread recipie in my Panasonic machine, tried others and never rises properly, can it be used in machine? Donโt want to buy even more ingredients that are in this version chia seeds etc just want to use other recipes (flax meal, oat fibre,gluten flour, – have you used that recipie in bread machine? Are the measurements same as conventional method, help please, Iโve failed at like 15 loaves all to the chooks, so costly Iโm about to give up, I weigh dry Ing but have aus cup tbs meals etc
Hi Jennie, sorry to hear you have some bad luck with other machines. My bread works handmade over machine but you can use the machine. The only suggestions I make is to activate the yeast in the water first. Ensure the activated yeast and salt are separated. If your Panasonic has an agitator that can be taken out after the first kneading then do that. With all of the testing I have done (I have a Panasonic Crusty Bake bread maker) I find that kneading a second time causes the bread to be denser with a lower rise and this may be your problem. After saying all that it still works better in a pan in the oven as the loaf can rise so much further than in a bread machine. My measurements also suit Aussie cups (as I am an Aussie).
Overdue update, it turns out it was my supplier of gluten flour- local health foods shop has it in containers and you weigh how much u want, they were out of stock so I bought a brand name one on line as I live rural, and now every time perfect, so many wasted times

My bread was wet even after an ecrmtra 30 minutes baking time.
Not sure why.
I had a breadmaker for years. Got rid of it thinking I would never be making bread again. Till I saw this recipe! Would it work and be crusty if made traditionally without a breadmaker? It looks so delicious!
haven’t heard of some of the things in this recipe, but love olives and feta. can I do this by hand and not in a breadmaker? I have one – but not the one you’re promoting.
when will the food industry catch on to those of us on keto? sugar is no issue for me at all, but I do like a good sandwich once in a while.

Hi Lin, yes you can. It will add to the carbs as oat fibre is zero carb but it will still workout fine.
could you use this recipe without the stuffing and use the soft white setting?

Gotta say this bread is awesome. I did look at the serving size and it says 1g per serve and I really have no idea how you can cut a piece of bread that weights only 1g
Oops lol. The g is not meant to be there. The nutritional is for 1 slice/ based on 14 slices out of the loaf.

that’s interesting. I’ve had this breadmaker since I came out, and have been making normal bread in it, but I always do activate the yeast (I do it in the thermomix).
I’m really happy to see that you’re doing some recipes in this breadmaker, I love mine it’s so great to be able to make bread during the week when I’m really busy with work
