Keto Tabbouleh Salad – using hemp hearts


The simple things in life are often the best, and our Keto Tabbouleh Salad is perfection! This is one of those salads I could make and enjoy every day!
A quick and easy keto side salad that is so versatile. It pairs well with any protein and is so good just on its own.

I was so happy that nearly all the fresh ingredients came from my garden when making this recipe today. But truly it is a simple salad that only requires 7 ingredients.
All you need is parsley, mint, spring onion, tomato, lemon, hemp hearts and hemp oil (or oil of choice).

The keto tabbouleh salad is pretty easy to make. It is pretty much a chop it and mix it. It is a keto salad that is ready in minutes. I have included a Thermomix keto tabbouleh recipe as well for all our thermi-fans!
You could add some diced cucumber and any other fresh herbs like chives or coriander too.

what to serve it with
Tabbouleh goes great with so many other foods. Pair it with a steak and sauteed mushrooms, or a keto chicken kebab. How good does mine pictured below look?
What is so good about tabbouleh is that it can be used in hot dishes too. Sprinkle over any curry, stew or casserole. Also using it up in soup, stew, keto broth etc is a great idea.
I would serve this with our Buttery Beef Casserole, Keto Butter Chicken or the Saffron Chicken Korma!

Keto Tabbouleh Salad
Ingredients
- 1 cup parsley I use flat-leaf (continental parsley) See Note 1
- 12 mint leaves
- 1 spring onion See Note 2
- 6 cherry tomatoes or 1 small tomato
- 1/4 cup hemp hearts See Note 3
- 1-2 tbsp hemp oil or olive oil, See Note 4
- Zest and juice of half a lemon
Instructions
CONVENTIONAL METHOD
- Finely chop parsley and mint and place into a mixing bowl
- Thinly slice spring onion and add to mixing bowl.
- Dice the tomato as chunky or fine as you prefer and transfer to bowl.
- Add hemp hearts, hemp oil, zest and juice to salad ingredients. Stir to combine. Serve.
THERMAL METHOD
- Place parsley, mint and spring onion into mixer bowl and chop 5 sec/speed 7. Transfer to a bowl. Reserve.
- Place the tomato into mixer and chop 2 sec/speed 5. Add to reserved salad.
- Add hemp hearts, hemp oil, zest and juice to salad ingredients. Stir to combine. Serve.
Notes
- I use a flat leaf parsley. The curly variety I am just not a fan of. Chop both the leaves and stems if preferred.
- A spring onion is a scallion or shallot (by other names).
- Hemp hearts (seeds) are available in most supermarkets. I LOVE Vasse Valley hemp hearts. Only newly discovered to me but omg in love with their products.
- Hemp oil is delicious but either extra virgin or avocado oil would be a good substitute.
- Tabbouleh is best made and eaten on the day. However, this salad can be kept in the fridge for a couple of days. If it doesn’t look so appetising after a couple of days add it to any stock, soup, stew, casserole or keto pasta dish.
