
This keto matchstick recipe was inspired by one of members and testers Lynda Watters. Lynda whipped up a quick version and shared it on our socials and everyone went crazy! 😂
It seems I was oblivious to what a matchstick even was let alone that you all seem to want to make them.
Anyway, here is my version of a keto matchstick. I have added a couple of different ways to serve them too.

To make this keto matchstick recipe you are going to need our Mad Creations Soft Wrap Mix. I do not have any recipes similar to this one so sorry about that. However you can check our Keto Premix Products page for stockists or to order online.
Depending on your idea of the best matchstick recipe, you will need some sugar free jam, cream, cream cheese, Keto Lemon Curd, unsalted butter and some sweetener. Honestly though I love this with the curd but you can add some vanilla extract, lemon juice or whatever flavour you prefer in a keto cheesecake recipe.
Alternatively, you can use our Easy Keto Custard with some jam or fresh berries.

how to make keto matchsticks
Preheat a fan forced oven to 190°C. Line a baking tray with baking paper.
Okay, so you want to prepare the Mad Creations Soft Wrap Mix as per the instructions. Divide the dough into 4 portions. Roll out one portion into a large rectangle to as thin as you can get it. The dough should almost be sheer. Using a knife or pizza wheel, cut the dough into strip 15 cm x 4 cm. you can cut as many as you wish to prepare at one time. Any left over dough can be used for wraps, corn chips etc or kept in the fridge until required.
Place the strips onto the baking tray and brush with a little melted butter and sprinkle over powder sweetener. I do this through a sieve.
Bake 4-5 minutes turning after 3 minutes. Transfer from baking tray to wire cooling rack and allow to completely cool before using.
Whip cream to a soft peak then add cream cheese, sweetener and lemon curd. Whip until smooth and creamy. Transfer to a small bowl or piping bag if using. ( I used my awesome new Lekue Piping Pen)
Spread a layer of jam and then a layer of cream onto one strip. Top with another strip and repeat. Place a final strip on the top and dust with powdered sweetener. Serve.

how to serve them
The Keto Matchsticks are best served once made. With jam on such a thin pastry you don’t want it to go soft.
As you can see in my pictures I tried a couple of different ways to layer them. I did do some with layers of lemon curd and the cheesecake filling too. They would also go great with sugar free Nutella or even as a pastry for our Keto Vanilla Slice recipe.

Keto Matchsticks Recipe
Ingredients
- 1 packet Mad Creations Soft Wraps Mix prepared as per packet instructions to dough stage, See Note 1
- 1/2 cup thickened cream (125g) See Note 6
- 250 g cream cheese
- 1 tbsp powdered sweetener plus more for serving, I use Sukrin Melis, See Note 4
- 1 tbsp unsalted butter melted
- 2 tbsp Keto Lemon Curd click for recipe, See Note 5
- 3 tbsp sugar free jam See Note 2
- 1 cup strawberries or berry of choice, See Note 3
Instructions
CONVENTIONAL METHOD

- Cut prepared Soft Wrap dough into 4 equal pieces.
- Roll out one portion into a large rectangle to as thin as you can get it. The dough should almost be sheer. Using a knife or pizza wheel, cut the dough into strip 15 cm x 3 cm. For this recipe I used 1/4 of the dough and rolled out 18 rectangles for a total of 6 matchsticks. You can cut as many as you wish to prepare at one time. Any left over dough can be used for wraps, corn chips etc or kept in the fridge until required.
- Place the strips onto the baking tray and brush with a little melted butter and sprinkle over powdered sweetener. I do this through a sieve.
- Bake 4-5 minutes turning after 3 minutes. Pastry should still be pale but slightly crisp. Transfer from baking tray to wire cooling rack and allow to completely cool before using.
- Whip cream to a soft peak then add cream cheese, sweetener and lemon curd. Whip until smooth and creamy. Transfer to a small bowl or piping bag if using.
- Spread a layer of jam onto matchstick. Trim the ends of the strawberries if adding them as standing strawberries like pictured. Alternatively slice berries and add a layer of berries to the matchstick, then a layer of cheesecake mixture. Top with another strip and repeat. Place a final strip on the top and dust with powdered sweetener. Serve.
THERMAL METHOD
- Preheat oven to 190°C. Line a baking tray with baking paper.
- Mix the wrap mixture for 20 sec/speed 4.
- Cut prepared Soft Wrap dough into 4 equal pieces.
- Roll out one portion into a large rectangle to as thin as you can get it. The dough should almost be sheer. Using a knife or pizza wheel, cut the dough into strip 15 cm x 3 cm. For this recipe I used 1/4 of the dough and rolled out 18 rectangles for a total of 6 matchsticks. You can cut as many as you wish to prepare at one time. Any left over dough can be used for wraps, corn chips etc or kept in the fridge until required.
- Place the strips onto the baking tray and brush with a little melted butter and sprinkle over powdered sweetener. I do this through a sieve.
- Bake 4-5 minutes turning after 3 minutes. Pastry should still be pale but slightly crisp. Transfer from baking tray to wire cooling rack and allow to completely cool before using.
- Insert Butterfly. Whip cream to a soft peak (speed 3/MC Off and watch through the lid). Remove butterfly and add cream cheese, sweetener and lemon curd. Whip until smooth and creamy 1 min/speed 3 scrape and repeat if needed. Transfer to a small bowl or piping bag if using.
- Spread a layer of jam onto matchstick. Trim the ends of the strawberries if adding them as standing strawberries like pictured. Alternatively slice berries and add a layer of berries to the matchstick, then a layer of cheesecake mixture. Top with another strip and repeat. Place a final strip on the top and dust with powdered sweetener. Serve.
Notes

- I prefer to use Natvia sugar free raspberry jam, however I do have a recipe for a Raspberry Chia Jam that can be used.
- Any berries can be used in place of strawberries.
- Any sweetener of choice can be used. I do prefer Sukrin Melis as it has no aftertaste.
- Any other flavours can be used in place of the lemon curd. Add some jam to the mixture, some melted dark chocolate or vanilla. So many options!
- Thickened cream is a higher fat cream. You can substitute creme fraiche or sour cream in its place.
- Matchsticks are best consumed on the same day as making.
- The unfilled pastry strips can be stored in an airtight container at room temperature and stay crisp.
What jam jellies or preserves do you use? I have bought different kinds and they were either too runny or had an off taste became of the sweetener they used. I want to make these for the holidays.
How clever! They look so elegant, and what a great way to use up strawberries. Hard to believe they aren’t loaded up with sugar when they look so good!
