Ingredients
 
 

  • 4 cups filtered water
  • 40 g fresh ginger
  • 25 g fresh turmeric or extra ginger
  • 2 tablespoons fresh lemon juice (30g)
  • ¼ teaspoon cayenne pepper
  • Pinch salt flakes
  • 1-2 teaspoons sweetener optional

TO SERVE

  • Fresh mint leaves
  • Ice cubes

Instructions
 

CONVENTIONAL METHOD

  • Pour water into a large saucepan over high heat.
  • Roughly chop ginger and turmeric and add to the water. Bring to a boil then remove the pan from the heat. Leave to cool for 20 minutes.
  • Strain mixture through a nut bag or a fine sieve.
  • Add remaining ingredients to the tonic. Test and adjust sweetener or spice to personal taste.
  • Serve with fresh mint over ice.

THERMAL METHOD

  • Roughly chop ginger and turmeric and place into mixer bowl. Chop 5 sec/speed 7. Scrape down sides of bowl.
  • Add water to mixer bowl. Heat 7 min/100°C/speed 2. Leave to cool for 20 minutes.
  • Strain mixture through a nut bag or a fine sieve.
  • Add remaining ingredients to the tonic. Test and adjust sweetener or spice to personal taste.
  • Serve with fresh mint over ice.

Notes

  1. Don’t throw away the solid once strained. Either pop them into the freezer and reuse for another batch or use for broths or in cooking.
  2. Serving sizes are just 125ml. Alternatively add 125ml to a large glass of ice and top up with soda water.
