The Ingredients

SAUSAGE ROUGAIL

Saute plump Creole sausage until golden brown and slice them into bite-sized pieces.

Crush the onion, garlic, and ginger in a mortar and pestle. Add olive oil and mix until it makes a thick paste.

Heat a skillet over medium-high heat. Add the chopped onions paste, and sausage; cook stirring occasionally until lightly browned.

Add tomatoes, tomato paste, chili, paprika, thyme, salt flakes and black pepper. Simmer, covered for 10-15 minutes or until reduced.
