Easy Keto Gravy

  • 1 cup beef broth (250g) or 1 stock cube in 1 cup of water
  • 0.5 teaspoon glucomannan powder xanthan gum or 1 tablespoon beef gelatin
  • 1 tablespoon collagen optional
  • Salt and pepper to taste



  • Add all the ingredients into the pan over moderate heat. Cook stirring until the gravy thickens. Remove from heat once the gravy has thickened. Season to taste and serve.
  • Alternative cooking method. If you have prepared a roast, use the pan and drippings for extra flavour. Simply remove the roast from the pan and place the pan over moderate heat. Add all the ingredients to the pan and cook stirring until thickened. Make sure you use a spatula to scrape all the good stuff off the bottom of the pan into the gravy.


  • Place all the ingredients into the mixer bowl; mix 20 sec/speed 4.
  • Cook 14 min/120°C/speed 2. Extend cooking time if required. Season to taste and serve.


Always use xanthan gum sparingly as it can leave a slimy mouth feel. If the gravy is slimy simply add more broth.
Glucomannan powder is great to use as a thickener but is not yet readily available in our local grocery stores.
For a vegetarian and keto vegan version omit the collagen and use a vegetable broth.
Best cooked and served as needed
To reheat, cook in a small pan over low heat whisking until warmed through.
