Bacon Chops Guacamole and Poached Eggs

The keto breakfast of champions.  Bacon chops are the best!

Ingredients

  • 2 50g bacon chops 1 got these in Aldi, but you can get a butcher to cut thick bacon
  • 20 g butter
  • 2 eggs use the freshest un-pasteurised eggs
  • 30 g white vinegar
  • 1/2 avocado
  • 20 g lime juice
  • 1 tbsp fresh parsley or cilantro chopped
  • 1 tsp jalapeno fresh and chopped
  • salt and pepper to taste
  • chilli flakes

Instructions

  • In a small frypan heat butter over medium heat and cook bacon until golden
  • While bacon is cooking poach eggs in a small saucepan of simmering water with vinegar for 2 minutes for a soft poached egg
  • In a small bowl mash avocado with lime juice, fresh herbs, jalapeño and salt and pepper
  • Serve with salt and pepper to taste and chilli flakes

Notes

If you can't find bacon chops and don't have a local butcher to cut them thick for you then you could use speck or kasher rip both of which are usually found in the deli meat sections in selected supermarkets.  
Alternatively normal bacon or pork chops would be an equally great substitute.
