CONVENTIONAL METHOD

  • Place all the ingredients into a mixer bowl.
  • Start whipping with a hand mixer on low and increase to medium-high. Whip until preferred soft or firm peaks. Don’t over-whip or your cream will become butter!

THERMAL METHOD

  • Insert whisk attachment. Place all the ingredients into the mixer; mix speed 3/cap off until soft peaks (around 30-45 sec) or longer to stiff peaks. Don’t over-whip or your cream will become butter!

Tip for the Best Sugar Free Whipped Cream
  1. Chill and Prepare: Ensure your stand mixer bowl or mixing bowl and beaters are thoroughly chilled. This step is essential for achieving the perfect whipped consistency.
  2. Whip it Up: Pour the heavy whipping cream into the chilled bowl. Begin whipping on low speed, gradually increasing to medium-high speed. As the cream thickens, incorporate the powdered erythritol for a touch of sweetness.
  3. Vanilla Elegance: Add the vanilla extract to the cream as it continues to whip. At this point you can add extracts to flavor the cream. Add 1/2-1 tablespoon of unsweetened cocoa or cacao to make a delicious keto friendly chocolate whipped cream.
  4. Soft Peaks to Perfection: Watch closely as the cream thickens and soft peaks form. Be cautious not to overwhip, as it can lead to a grainy texture.
  5. Serving Brilliance: Spoon your luscious Keto Whipped into individual serving dishes. This velvety cloud of delight can stand alone as a divine dessert or serve as a luxurious topping for your favorite low-carb treats.
  6. Storage Wisdom: If you find yourself with leftovers, store your Keto Whipped in an airtight container in the fridge. Although it's best enjoyed fresh, it can retain its texture for a day or two.
Substitutions:
Feel free to experiment with flavored extracts like almond or coconut for a tasty twist. For those avoiding dairy, coconut cream can be an excellent substitute for heavy whipping cream. 
I use powdered erythritol in place of powdered sugar to make the cream low carb. You can use any powdered sweetener of choice..

If after chilling the mixture has separated gently stir with a spoon to combine or lightly whip to bring it back together.
