Keto Caramelized White Chocolate

Instructions

CONVENTIONAL METHOD

  • Preheat oven to 100°C fan forced or 120°C/240°F static oven.
  • Line a large baking tray with baking paper.
  • Place pieces of chocolate onto the baking tray. Bake 10 minutes. See Notes.
  • Using a silicone spatula scrape and mix the chocolate spreading into a rough 22cm square.
  • Return tray to oven and bake a further 10 minutes. Repeat this 5 times.
  • If the chocolate is still pale increase to oven temp to 110°C and bake a further 10 to 20 minutes mixing after the first 10 minutes.
  • Once the desired level of caramelization is achieved scrape the chocolate into a silicone mold. Smooth over and place into the fridge until set.

THERMAL METHOD

  • Place pieces of chocolate into the mixer bowl. Cook 10 min/100°C/stir.
  • Using a silcone spatula scrape the chocolate from the bottom of the mixer and mix by hand to mix through.
  • Cook a further 10 min/100°C/stir. Scrape the chocolate into a silicone mold. Smooth over and place into the fridge until set.

Notes

Check your oven temperature. If your oven does run hot, then lower the temperature than the recipe at first and then slowly increase it if the chocolate is not caramelizing. It does not ruin the chocolate if you start lower. If your oven is too high, and it burns or dries out the chocolate this cannot be undone. Better to be safe.
Can I get Vitawerx from the supermarket? Sorry major shopping centres do not carry this product.
Can I use another brand of chocolate? We have tested Noshu and Well Naturally and both failed the test. No other brands have been tested.
Can I make this on the stove top? Yes, you can with patience and watching your temperatures. Stir occasionally and do not have the temp up to high as it will easily burn and become grainy.
Can I make it in the microwave? No.
Can I make salted caramel? Yes. Add a pinch of salt in the last 10-120 minutes and stir through.
Can I add MCT or other oils to chocolate when caramelizing? No. It will split and become grainy.
Can I make sugar free keto caramelized white chocolate in the Thermomix? Yes. The instructions are included, and this recipe has been tested in a variety of thermal cookers.
