- 80 g sunflower seeds for nut free crackers, omit almond meal and double sunflower seeds
- 45 g parmesan roughly chopped
- 80 g almond meal or almonds
- 40 g black sesame seeds you can use more white if you don't have black
- 40 g white sesame seeds
- 1 tsp Vegemite
- 1 egg
CONVENTIONAL METHOD
Preheat oven 170℃. Line a large tray with baking paper
Place sunflower seeds, parmesan and almond meal into a food processor and blend on high speed for 10 seconds.
Add remaining ingredients and pulse until dough comes together.
Roll mixture between 2 sheets of baking paper until 2-3 mm thick. Cut with a cookie cutter into desired shapes or use a knife or pizza wheel to cut into squares. Lift the mix onto the baking tray
Bake 12-16 minutes or until slightly crisp and golden. Cool on a wire tray before storing in an airtight container.
THERMOMIX METHOD
Preheat oven 170℃. Line a large tray with baking paper
Chop sunflower seeds, parmesan and almond meal for 10 sec/speed 10
Add remaining ingredients and mix 15 sec/speed 3. Follow from step 4 above.
Store crackers in an airtight container for up to 2 months.
If crackers soften with time simple place on a baking tray in preheated oven (170℃) until crispy.
