Low Carb Egg Roll in a Bowl

A bit of a classic keto favourite is Low Carb Egg Roll in a Bowl. Also known as Crack Slaw because it is very addictive. I am sure you are going to love my spin on this popular dish.

Ingredients

  • 1 tablespoon avocado oil
  • 450 g pork mince (ground pork) or pork/beef mince combination
  • ½ teaspoon white pepper
  • Salt and black pepper to taste
  • 2 tablespoons ginger finely minced
  • 1 clove garlic finely minced
  • 1 tablespoon Vegemite Marmite (optional)
  • 3 1/2 cups shredded cabbage or kale or coleslaw mix
  • 1 tablespoon gluten free tamari or coconut aminos
  • 1 teaspoon sesame oil
  • 1 teaspoon toasted sesame seeds
  • 2 tablespoons green onion finely sliced
  • 1 red chilli deseeded and finely sliced, or ½ teaspoon red chilli flakes
  • Fresh coriander leaves and lemon wedges to serve

Instructions

CONVENTIONAL METHOD

  • In a large wide frying pan or cast-iron pan heat the avocado oil over medium-high heat. When hot add the ground pork/beef. Break up any clumps with a silicone spatula and season with white pepper, salt and black pepper. Continue frying until lightly golden brown.
  • Add ginger, garlic and Vegemite (if using) and stir to coat the meat. Add the shredded cabbage (or coleslaw mix) and stir to mix through evenly. Reduce heat slightly and continue to cook until the cabbage begins to wilt.
  • Stir through the tamari and sesame oil.
  • Divide between 4 serving bowls. Sprinkle with sesame seeds, green onions, chilli, and coriander leaves. Serve with lemon wedges.

THERMAL METHOD

  • Add avocado oil to the mixer bowl and heat 3 min/120°C/speed 1.
  • Place mince, white pepper, salt and black pepper into the mixer; cook 5 min/120°C/reverse/speed 1.
  • Add ginger, garlic and Vegemite (if using); cook 2 min/100°C/reverse/speed 1.
  • Add the shredded cabbage (or coleslaw mix) and stir to mix through evenly; cook 3 min/100°C/reverse/speed 1.
  • Stir through the tamari and sesame oil.
  • Divide between 4 serving bowls. Sprinkle with sesame seeds, green onions, chilli, and coriander leaves. Serve with lemon wedges.

Notes

INGREDIENTS
1. Avocado oil is delicious, but you can use any oil of preference.
2. I use a mixture of pork and beef mince, but any meat can be used in this recipe. For a keto vegan egg roll in a bowl substitute plant-based mince or a mixture of mushrooms.
Vegemite adds umami to this dish. It is a yeast-based spread and is now available in a gluten free form. This ingredient can be omitted or reduced for a less salty flavour.
3. Your local supermarkets have loads of different slaw mixes if preferred to buy than make your own. Cabbage can be used without any carrot if preferred for a slightly lower carb content.
4. Tamari and coconut aminos are available in select supermarkets in the gluten free aisle and/or Asian foods aisle.
COOKING
5. I use a Le Creuset Balti dish to cook my egg roll in a bowl. It is a great conductor of heat at a moderate temperature and holds all the ingredients in.
STORAGE
6. This recipe is just as good cold as hot. Store in the fridge for up to 3 days.
7. This dish can be frozen before and after cooking.
SERVING SUGGESTIONS
8. Low Carb Egg Roll in a Bowl can be served in lettuce cups or wrapped in any green leaves for a tasty San Choy Bau style dish.
9. Alternatively, serve as part of a Mason Jar Salad with fresh chopped avocado, crispy lettuce and thinly sliced red onions.
10. Another way to serve that is delicious is wrapped in our Mad Creations Soft Wraps. In fact, you could very well wrap the mixture in the wraps and fry for a low carb egg roll.
