Keto 2 Minute Noodle Soup

Ingredients

  • 1 chicken stock cube
  • 1/4 cup Edamame Spaghetti broken into small pieces
  • 1/4 tsp dried parsley
  • 1/4 teaspoon dried chives
  • 1/4 teaspoon onion salt
  • 1/4 teaspoon turmeric
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon chilli flakes
  • 1 cup boiling water
  • 1/4 teaspoon sesame oil
  • 1/4 teaspoon chilli oil

OPTIONAL

  • 1 tablespoon cooked chicken shredded
  • 1 tablespoon cooked vegetables
  • Konjac noodle or zucchini noodles in place of Edamame Spaghetti

Instructions

CONVENTIONAL METHOD

  • Crumble stock cube into a large mug. Add spaghetti and all spices.
  • Almost fill mug with boiling water. Stir to combine. Cover with cling film and a plate to trap heat. Leave to rest for 3 minutes.
  • Stir and check softness of spaghetti. If needed microwave for 90 seconds until softened.
  • Add sesame oil and chilli oil to taste.

Notes

The dry ingredients for this can be made in large quantities for convenience. Store in small airtight containers in individual serves.
Add any extras to your soup to your liking.
Chicken stock cube and boiling water can be substituted for 1 cup of chicken stock/bone broth or vegetarian broth or stock for a vegetarian option.
Add more oil or butter to increase fat if needed.
