Keto Creme Fraiche Ice Cream

Ingredients

  • 600 ml crème fraiche
  • 100 ml coconut milk
  • 35 g sweetener of choice I used Xylitol
  • 1/2 lemon zest
  • ½ tsp vanilla extract
  • 3 tsp Optional vegetable glycerine this helps to keep a softer serve

Instructions

  • Mix all the ingredients together in a large bowl.
  • Pour into ice cream maker and churn according to manufacturer’s instructions.
  • Pour into a container and freeze for minimum 2 hours or until firm.

Notes

  1. Vegetable glycerine is available from health and specialty food stores. It is used to help keep the ice cream soft and scoopable. If unavailable use a teaspoon of guar gum instead.
