Keto Spiced Cranberry Sauce

Keto Cranberry Sauce with a touch of spice and orange zest is a heavenly thing. No added sugar and the perfect balance of sweet and savoury this keto sauce is set to be a hit on any table.

Ingredients

  • 150 g powdered or granular white sweetener
  • 2 star anise
  • 3 cups fresh or frozen cranberries
  • Salt and pepper to taste
  • 1 tablespoon apple cider vinegar
  • 1/4 cup dry red wine whiskey, or brandy
  • Zest of 1 orange
  • 1/4 cup orange juice or water

Instructions

  • Place sweetener in a large wide pan over medium high heat. When sweetener is melted add star anise and continue to cook for a further 5 minutes or until a caramel begins to form.
  • Add star anise and continue to heat the sweetener for another 2 minutes to infuse the star anise.
  • Add cranberries, salt and pepper and continue to cook, stirring occasionally, and cook until cranberries begin to pop and release juices into the pan.
  • Add remaining ingredients and continue to cook until thick and jammy.
  • Remove from heat. Discard star anise and store in an airtight jar.

Notes

Some sweeteners may form crystals upon cooling. Powdered sweetener does reduce this affect.
To remove the crystals just slightly heat or leave at room temperature to melt.
STORAGE
Cranberry sauce will keep in the fridge for up to 2 weeks.
SUBSTITUTES
Cranberries can be substitutes with any low car berry but will be slightly sweeter.
The orange juice added in this recipe adds 1g extra net carb to reduce to 3g net carb per 2 tbsp serve just use water. I just love the flavour and personally I would only use half of the serving size anyway.
