Easy Zucchini Slice

Ingredients

  • 1/2 onion
  • 4 rashers streaky rindless bacon or leftover ham diced into small cubes
  • 1 tablespoon olive oil
  • 350 g zucchini grated
  • 7 eggs
  • 1 cup shredded cheddar
  • 2 tablespoons chopped fresh parsley
  • 2 tablespoons hemp seeds optional
  • 2 teaspoons Ranch Seasoning optional
  • Salt and pepper

Instructions

CONVENTIONAL METHOD

  • Preheat the oven to 170 ̊C/375°F. Line a 26cm x 20cm (10" x 8") baking dish with baking paper.
  • Dice the onion and bacon. Heat the oil in a large skillet over medium-high heat. Add the bacon and onion; sauté until lightly golden. Transfer to a large mixing bowl.
  • Place the grated zucchini between paper towels or a clean kitchen cloth. Squeeze the water from the zucchini and discard. Place into the bowl with the bacon. Add remaining ingredients, season well, and mix to combine. Pour into the prepared baking dish. Bake for 35-40 minutes or until cooked through.

THERMAL METHOD

  • Preheat the oven to 170 ̊C/375°F. Line a 26cm x 20cm (10" x 8") baking dish with baking paper.
  • (Pre-grate the zucchini - place roughly chopped zucchini into the mixer; chop 4 sec/speed 4. Place the grated zucchini between paper towels or a clean kitchen cloth. Squeeze the water from the zucchini and discard.)
  • Place the onion, bacon, and oil into the mixer; chop 4 sec/speed 4. Scrape down the sides of the bowl; cook 4 min/120°C/reverse/speed 1.
  • Add the remaining ingredients, season well; mix 5 sec/speed 4. Pour into the prepared baking dish. Bake for 35-40 minutes or until cooked through.

Notes

Healthy Zucchini Slice Ingredients
Bacon - I use rindless bacon or trim the rind off for this recipe. Seeing that the bacon is not cooked until crispy I would prefer not to be chewing on rubbery rind in the slice. The bacon can be left out for a vegetarian zucchini slice.
Zucchini - I do grate the zucchini and prefer to do this by hand even if using the Thermomix. I squeeze out the excess water so the slice is not too wet or watery. I have tested the recipe without squeezing and with and I much prefer it squeezed out. Slicing zucchini into ribbons or using a spiraliser to make with spiralised zucchini noodles makes for something different too.
Hemp seeds - the hemp seeds are a great alternative for the usual plain or self raising flour in a recipe for zucchini slice. They help absorb excess moisture. They are optional in this recipe. Some keto zucchini slice recipes use almond meal or almond flour in place of flour but I find no need for it.
Cheddar - I sometimes make this one cup grated cheddar cheese and a quarter cup of parmesan for extra flavour. You can use any cheese you love. Our original recipe in Lunch Time Keto uses cheddar, parmesan and feta.
Onion - I use just half a large onion finely chopped but you can add more or a combination with some finely sliced green onion as well.
This recipe yields approximately 6-8 servings. The actual number of servings will depend on your preferred portion sizes. 
To calculate the weight of one serving, prepare the recipe as instructed. Weigh the finished recipe, then divide the weight of the finished recipe by 6-8. The result will be the weight of one serving.

You can freeze zucchini slice. Store it in the fridge for a max of 3-4 days or freeze in individual portions for simple lunches and dinners.

Zucchini Slice Variations - here are just a few of my favourite ways to bake, make, and flavour a simple zucchini slice.
Vegetarian Zucchini Slice - leave out the bacon. I also love grated pumpkin in this recipe. No need to cook it just grated or spiralise pumpkin or squash (or even spaghetti squash noodles) and fold it in before baking.
Zucchini Slice Thermomix - this is such an easy recipe to make with your Thermomix. This zucchini slice with bacon is suitable to make in the TM6, TM5 and TM31. 
Zucchini Slice without flour - this is also a great keto zucchini slice recipe. No flour needed at all.
