Healthy Zucchini Slice Ingredients
Bacon - I use rindless bacon or trim the rind off for this recipe. Seeing that the bacon is not cooked until crispy I would prefer not to be chewing on rubbery rind in the slice. The bacon can be left out for a vegetarian zucchini slice.
Zucchini - I do grate the zucchini and prefer to do this by hand even if using the Thermomix. I squeeze out the excess water so the slice is not too wet or watery. I have tested the recipe without squeezing and with and I much prefer it squeezed out. Slicing zucchini into ribbons or using a spiraliser to make with spiralised zucchini noodles makes for something different too.
Hemp seeds - the hemp seeds are a great alternative for the usual plain or self raising flour in a recipe for zucchini slice. They help absorb excess moisture. They are optional in this recipe. Some keto zucchini slice recipes use almond meal or almond flour in place of flour but I find no need for it.
Cheddar - I sometimes make this one cup grated cheddar cheese and a quarter cup of parmesan for extra flavour. You can use any cheese you love. Our original recipe in Lunch Time Keto uses cheddar, parmesan and feta.
Onion - I use just half a large onion finely chopped but you can add more or a combination with some finely sliced green onion as well.
This recipe yields approximately 6-8 servings. The actual number of servings will depend on your preferred portion sizes.
To calculate the weight of one serving, prepare the recipe as instructed. Weigh the finished recipe, then divide the weight of the finished recipe by 6-8. The result will be the weight of one serving.
