Whipped Cream Buttercream (Keto & Low Carb)

This delicious low carb whipped cream buttercream is the Fshizzle! I am not kidding! Sweet but not overly sweet. This is the frosting you make when you hate super sweet buttercream.

Ingredients

  • 250 g cream cheese softened
  • 1 cup powdered sweetener
  • 1 teaspoon vanilla extract
  • 2 1/2 cups thickened cream coconut cream or whipping cream
  • Colour or flavour of choice optional

Instructions

CONVENTIONAL METHOD

  • Insert the wire whisk attachment to a stand mixer or hand mixer.
  • Add the cream cheese, sweetener and vanilla to the bowl; mix until smooth.
  • While beater are rotating gradually pour in the cream and mix until thick and smooth.
  • Stir through any flavour, or colour. Pipe or spoon onto the cake to serve.

THERMAL METHOD

  • Add the cream cheese, sweetener and vanilla to the bowl; mix 10 sec/speed 5.
  • Insert the whisk attachment; set the mixer to 2 min/speed 4; pour in the cream through the opening in the lid while blades are rotating; mix until the frosting is thick and whipped.
  • Stir through any flavour, or colour. Pipe or spoon onto the cake to serve.

STORING
Store in an airtight container in the fridge for up to 1 week or freeze for up to 1 month.
Use the coconut cream for a dairy free keto frosting. I chill cream overnight and scoop out only the thickest part for whipping. 
Magimix Keto Frosting – For the keto buttercream frosting. I just set the Cook Expert to food processor 30 seconds and mix and scrape down the sides as needed until I have a fluffy buttercream.
Thermomix Keto Frosting – The buttercream can be whipped with the butterfly whisk attachment in place too. Please stop the mixer from time to time when making the frosting to scrape the sides down. Continue to mix until very light and fluffy. 
Flavors – to flavor the frosting simply add any of your favorite extracts, zest, unsweetened cacao etc. and mix.
The buttercream may become firm in the fridge to soften simple leave at room temperature until it softens.
