Slow Asian Cider Braised Keto Pork Belly

Ingredients

  • 1 kg pork belly
  • 800 ml chicken broth
  • 330 ml cider Magners Low Carb
  • 50 ml coconut aminos or gluten free Tamari
  • 50 g onion diced
  • 3 star anise
  • 1 tsp five spice
  • 3 garlic cloves finely diced
  • 1 10cm ginger grated
  • 1 tsp chilli salt or chilli flakes
  • 1 lemon quartered, skin on

Instructions

  • Add all ingredients into slow cooker and cover the pork belly.
  • Slow cook for 3 hours, turning half way.  
  • Cook until the pork belly is super soft and the rind is almost gelatinous.
  • Serve with Asian greens and konjac noodles or rice

Notes

  1. If you don't want to use the cider you can completely leave it out and replace with any bone broth.
  2. This recipe is great to make the day ahead
  3. Use left overs in the lunch box or freeze in individual portions.
