Mad Creations Keto Thai Laksa Paste

It is so great making your own laksa paste. trust me when I say it makes a difference to your overall laksa.

Ingredients

  • 1 tbsp fresh galangal
  • 1 tbsp fresh ginger
  • 1 tbsp fresh turmeric
  • 1 stalk fresh lemongrass white part only, chopped finely
  • 1/2 spanish onion
  • 6 dried chillies
  • 3 fresh chillies
  • 1 tsp lime zest
  • 1 tsp cumin seeds
  • 1 tsp coriander seeds
  • 1 tsp fennel seeds
  • 1/2 tsp cinnamon
  • 1/2 tsp white pepper
  • 1 tsp pink Himalayan salt
  • 4 roots and stems fresh coriander
  • 2 kaffir lime leaves
  • 2 cloves garlic
  • 2 cardamon pods

Instructions

  • Add all ingredients to mixer
  • Blend 5 seconds / speed 10
  • Scrape bowl
  • Repeat until paste consistency

Notes

This paste is also amazing if you freeze it into portion size.  Simply add the paste to an ice cube tray, freeze overnight then empty into a ziplock bag.  This way when you need some paste you can easily go to the freezer and grab a cube straight into the pan.  No need to even defrost.  This is great to reduce any wastage.
