Keto White Christmas recipe

A beautiful keto White Christmas recipe that is super simple to make and very low on carbs.

CONVENTIONAL METHOD

  • Line a 28cm x 18cm slice tin with baking paper.
  • Add all dry ingredients and vanilla extract to a large mixing bowl.
  • In a microwave safe pyrex jug, melt together cacao butter and coconut oil for 30 secs on high and then stir and repeat until melted.
  • Add 50g white chocolate to cacao butter mix and return to the microwave for 30 seconds. Stir until melted.
  • Fold into dry ingredients and combine well. Pour into prepared slice tray.
  • Place into fridge to set for 30 minutes
  • Once Keto White Christmas is set; melt remaining white chocolate in microwave safe jug and drizzle over the top of the slice. Refrigerate over night.
  • Cut into 3cm x 3cm squares

THERMOMIX® METHOD

  • Line a 28cm x 18cm slice tin with baking paper.
  • Add all dry ingredients and vanilla extract to a large mixing bowl.
  • Place cacao butter into mixing bowl and chop 6 sec/speed 10. Add coconut oil to cacao butter and heat 3 min/100℃/stir. Extend cooking time as needed to ensure all cacao butter has melted.
  • Add 50g white chocolate to cacao butter mixture and heat 2 min/100℃/speed 1. Follow from Step 5 above.

Notes

Store
Keto White Christmas can be stored in the fridge for up to 2 weeks or frozen up to 2 months.
Substitute any fruit or nuts as preferred, and recalculate the difference in carb content.
Whey protein and MCT powder have been added as a dry ingredient and are zero carb. Possible substitutes include milk powder but are hefty on carbs.
