Beef Brisket Stroganoff

Ingredients

  • 1 kg beef brisket pick a meaty looking piece, with not too much excess fat
  • 5 garlic cloves cut in half
  • 1 tbsp sweet paprika
  • 2 tsp pink Himalayan salt
  • 1 tsp white pepper
  • 2 cups beef stock
  • 2 tbsp tomato paste
  • 2 tbsp coconut aminos
  • 1 cup sliced mushrooms
  • 1/2 cup sour cream
  • cracked black pepper

Instructions

  • Add brisket, garlic, paprika, salt, white pepper, and stock to slow cooker (no need to brown beef)
  • Cook 6 hours on low
  • Add tomato paste, coconut aminos, and mushrooms to slowcooker
  • Cook 1/1/2 hours on low
  • Add sour cream and season with pepper
  • Cook final 1/2 hour until thick and brisket shreds
  • Eat it with some cauliflower-mash or just on its own.
  • Simple, fast and fabulous!

This recipe is suitable to freeze.
