Easy Thai Beef Salad

Thai Beef Salad is one of my personal favourites and this deliciously simple recipe is no exception. Perfect from the first mouthful to the last.

Ingredients

SALAD

  • Salt and pepper to taste
  • 2 cups baby spinach leaves
  • ½ small cucumber thinly sliced
  • ¼ small red onion finely sliced
  • ¼ cup mint leaves
  • ¼ cup coriander leaves

TO SERVE

  • 2 tablespoons peanuts roughly chopped (or almonds)

Instructions

CONVENTIONAL METHOD

  • Mix all dressing ingredients together in a small bowl and reserve.
  • Season the steak with salt and pepper. Sear on a chargrill or hot frypan. Cook to personal preference. Remove from heat and rest 10-15 minutes.
  • Meanwhile mix salad and dressing to combine. Pile the salad into bowl. Slice beef into strips and serve on top of salad. Garnish with nuts and extra chilli if using.

THERMAL METHOD

  • Mix all dressing ingredients together in a small bowl and reserve. (TM – 10 seconds/speed 4).
  • Season sirloin with salt and pepper and sear on a chargrill or hot frypan. Cook to personal preference. Remove from heat and rest 10-15 minutes.
  • Meanwhile mix salad and dressing to combine. Pile salad into bowl. Slice beef into strips and serve on top of salad. Garnish with nuts and extra chilli if using.

Notes

STORAGE
The salad once dressed should be consumed immediately.
INGREDIENTS
Gold sweetener can be found in the supermarket. 
Seasonings can be added to make a Thai fusion salad, or to add a change of flavor. Try Chermoula Spice Rub for a North African Beef Salad or try Cajun Spices for something a bit different.
Gluten free fish sauce is found in the sauce and Asian foods aisle in most supermarkets.
I use Gourmet Garden lemongrass paste in this recipe. Alternatively, use fresh lemon grass finely minced or grated .
