Mad Creations Vegemite & Cheese Keto Crackers

Born out of my love for Vegemite and cheese, I used parmesan in these to give a sharp flavour.

A tasty crispy cracker that tastes purely of Vegemite and cheese rather than nuts or seeds.

The crackers are really crunchy and go great with extra cheese. Top with your avocado, tomato, meat salad whatever you fancy.

I am sure you will love my Vegemite and Cheese Keto Crackers.  I would easily rate these as my best crackers yet.  I am trying not to make them again today haha.

The Ingredients

My love affair with keto crackers is so vast I have actually done a whole keto cracker Ebook. Plus the website has many versions as do several of my other books.

  • 80 g sunflower seeds ,for nut free crackers, omit almond meal and double sunflower seeds
  • 45 g parmesan, roughly chopped
  • 80 g almond meal or almonds
  • 40 g black sesame seeds you can use more white sesame if you don’t have black
  • 40 g white sesame seeds
  • 1 tsp Vegemite
  • 1 egg

If you are a lover of all thing Vegemite and Cheese you may also love my scrolls.  I may be still a little obsessed with my vegemite.

However, you can certainly swap it out for Aussiemite for a gluten free version.  The small amounts of Vegemite that I use cause me no inflammation at all, so I am not concerned.

Vegemite and Cheese Keto Crackers

Ingredients 

  • 80 g (2.82 oz) sunflower seeds for nut free crackers, omit almond meal and double sunflower seeds
  • 45 g (1.59 oz) parmesan roughly chopped
  • 80 g (2.82 oz) almond meal or almonds
  • 40 g (1.41 oz) black sesame seeds you can use more white if you don’t have black
  • 40 g (1.41 oz) white sesame seeds
  • 1 tsp (1 tsp) Vegemite
  • 1 (1) egg

Instructions

CONVENTIONAL METHOD

  • Preheat oven 170℃.  Line a large tray with baking paper
  • Place sunflower seeds, parmesan and almond meal into a food processor and blend on high speed for 10 seconds.
  • Add remaining ingredients and pulse until dough comes together.
  • Roll mixture between 2 sheets of baking paper until 2-3 mm thick. Cut with a cookie cutter into desired shapes or use a knife or pizza wheel to cut into squares. Lift the mix onto the baking tray
  • Bake 12-16 minutes or until slightly crisp and golden. Cool on a wire tray before storing in an airtight container.

THERMOMIX METHOD

  • Preheat oven 170℃.  Line a large tray with baking paper
  • Chop sunflower seeds, parmesan and almond meal for 10 sec/speed 10
  • Add remaining ingredients and mix 15 sec/speed 3. Follow from step 4 above.

Notes

Store crackers in an airtight container for up to 2 months.
If crackers soften with time simple place on a baking tray in preheated oven (170℃) until crispy.

    Love them – so crunchy & delish with a soft cheese 👍. Made them with both the sunflower seeds & almond flour but mostly up the sunflower seeds as Megan suggests, just for a break from flour ☺️😋

    Amazing tasty. Very easy to make. We have used this recipe many times. Subbed Cheesymite one time when ran out of Vegemite. Slightly milder, still great.

    Oh these are really good! Easy recipe, dough easy to handle & cut shapes from. I think I’m my next batch I’ll add a touch more Vegemite. So nice to have a cracker that will use up my giant jar of sunflower seeds! A winner & I have just bought the cracker book. Thanks!

    Being a huge vegemite lover I just had to make these, I just used almond meal and white sesame seeds
    They are so easy to make and really yummy..not sure how I am going to stop at a few!

    Could you use nigella seeds instead of black sesame seeds.? Would it change the flavour?

      It would change the flavour Monika. I would use double the sesame seeds in this case. 40g of nigella might be too pungent.

    tried to modify to make in a vitamix blender. didn’t work very well due to using the wrong appliance. I’ll wait until I get my thermomix

      Hi Dominica, You can just use almond meal and mix everything together in a bowl, no processor at all needed.
