These sugar free Keto Sesame Snaps came about purely out wanting to recreate a favourite old occasional snack that I absolutely loved.
If you know the little packets of sesame snaps I am talking about you will possibly know how tasty they really are.
I find it really ironic that the original product is quite often found in the health food aisle in the supermarket.
I mean really what is healthy in those at all? Anyway, I was totally inspired to see a sugar free sesame snap recipe would turn out.

Here is all you need to make either of our keto sesame snap versions.

I have updated the original recipe with one that is hard like toffee but softens in the mouth to a chewable keto sesame candy bar.
Tips on making our low carb sesame bars
I have made this sesame snap recipe quite a few times, and it has worked beautifully each time.
The thing you need to be careful with just like any toffee or praline is cooking it to the right timing that it will actually set hard.
You can tell by the colour and smell (it starts to get that “caramelly” toasted smell). It is then that you add the baking soda.
Simply place into the freezer once you have spread out onto the baking tray.
Low Carb Sesame Bar Variations
Now I know that this keto praline recipe can easily be substituted with different nuts, seeds and flavours.
You could easily flavour it up with any extract (licorice would be off the chain).
Liquid Stevia (butterscotch) and/or spices. I have used nutmeg, and a cinnamon one today, but there is no limits!
Substitute some of the sesame seeds for shredded coconut, sunflower seeds, pepitas, or crushed almonds.
Coat it in chocolate and dust it in nuts.
It also makes a great gift, bagged up with a bit of ribbon and a tag. Plus it is great for the kids lunchboxes as it is nut free keto snack too!

Sugar Free Sesame Snaps
Equipment
Ingredients
- 400 g (2 cups) Fibre syrup or Sukrin Syrups
- 100 g (3.5 oz) butter
- 1/2 teaspoon (0.5 teaspoon) baking soda
- Salt flakes
- 150 g (1 cups) sesame seeds or combo of sunflower and sesame
Instructions
- Line a large 34 x 24 cm baking tray with baking paper.
- Add the syrup and butter into a large microwave-safe bowl. Microwave (750W) for 7-8 minutes on high. Mixture should be thick and foamy.
- Stir through remaining ingredients. Pour mixture onto baking tray. Spread to cover tray. Place into freezer.
- Once the toffee has hardened break into pieces and transfer to an airtight container. Store in an airtight container in the freezer. The toffee will soften at room temperature and in your mouth.

- Sesame Seeds: Use unhulled or hulled sesame seeds.
- Allulose or Monk Fruit Sweetener: Choose a sugar-free sweetener to add sweetness without the carbs.
- Fibre syrup – you need to use a thick viscous fibre syrup like Nothin Naughty for this recipe. If looking at a substitute and the first ingredient is water, then it will not be suitable.
- Butter or Coconut Oil: Use butter or coconut oil to bind and add richness to the sesame mixture.
- Vanilla Extract (Optional): Add a touch of flavor with sugar-free vanilla extract.
- Salt: A pinch of salt enhances the overall flavor of the sesame snap.
- Allow the sugar-free sesame snap to cool completely before storing. They can be kept in the freezer to be firm and toffee-like.
- Store in an airtight container at room temperature or in the refrigerator.
- Properly stored, the sesame snaps should remain crisp for about a week.
- Sweeteners: You can substitute erythritol or monk fruit sweetener with other keto-friendly granulated sweeteners like allulose or xylitol.
- Fat Source: Swap butter with coconut oil or ghee if you prefer a dairy-free option.
- Crunchy Snack: Enjoy the sugar-free sesame snaps as a standalone crunchy snack, perfect for satisfying your sweet tooth.
- Yogurt Parfait: Break the sesame snaps into smaller pieces and use them as a topping for sugar-free Greek yogurt or our thick yogurt recipe.
- Cheese and Nuts: Pair with a selection of keto-friendly cheeses and a handful of mixed nuts for a balanced snack platter.
- Low-Carb Ice Cream: Crumble the sesame snaps over a scoop of sugar-free vanilla ice cream for added texture and flavor.
- Coffee or Tea Companion: Serve alongside your morning coffee or afternoon tea as a delightful treat.

Sugar Free Sesame Snaps
Ingredients
- 3/4 cup (0.75 cup) sweetener of choice
- 1/4 cup (0.25 cup) Fibre syrup
- Pinch (Pinch) salt
- 1 tbsp (1 tbsp) water
- 1 cup (1 cup) sesame seeds
- 1 tsp (1 tsp) vanilla extract
- 2 tsp (2 tsp) butter
- 1/4 tsp (0.25 tsp) baking soda
Optional flavours
- 1/2 tsp (0.5 tsp) cinnamon
- 1/2 tsp (0.5 tsp) fresh grated nutmeg
- salt flakes for a salted caramel
- extracts eg. licorice, maple, pistacho
Instructions
- Place sweetener, syrup, salt, and water into a large saucepan over medium heat and cook until sweetener is dissolved.
- Stir in sesame seeds.
- Cook, stirring often until mix goes a delicious caramel colour, approximately 5 to 10 minutes or until temp reaches 150℃, testing with a candy thermometer. Remove from heat immediately when you see it start to go dark caramel and you can smell the change in the mix.
- Stir through vanilla and butter. Carefully stir in baking soda. (baking soda causes the mixture to foam)
- Pour mix onto thermomat or oiled baking tray (no paper). Spread out to desired thickness. Leave to cool and harden.
- Break into pieces or score gently with the tip of a knife to cut into shapes. Store in airtight container in cool place or refrigerator.

Hi there, I made this recipe but probably didn’t cook it for long enough as it didn’t harden in the freezer. Is there a way to fix it? Maybe reheat it and cook it in microwave for longer? Although I have seeds and backing soda in it already. Would really appreciate your advice. Thanks.

Hi there! I’m in Canada and can only find the Gold & Maple Sukrin syrup. The recipe calls for Gold AND Clear. Can I double the Gold?

Hi Carla, You can just use the gold for both syrups and it works just as well. The Clear has now been discontinued globally.

OMG. This is amazing. The crunch, the sweet hit, fights off every carb craving I have.
Super easy to make…..but move quickly once it comes out of the microwave and you stir the other ingredients in. It starts to harden SOOOO quickly. -
I loved the first version of sesame snaps but WOW the new version is off the scales!!!

I made the recipe and found it toi sweet. Can I reduce something to make it less sweet? Also, it did not become crunchy even though it reached 150 with my candy thermometer. Any advice?

Hi Johanne, cook it further until it is golden and when you drop a bit in cold water goes hard ball like toffee. I think cooking it longer will make it more caramel for you and reduce the sweetness.

Did this with xylitol – followed instructions to the letter and it hasn’t hardened!! tastes good but is gooey and chewy rather than the ‘snap’ i was hoping for – would erythritol work better?-
Erythritol continues to get firmer after cooking. Always take toffee to hard ball stage as per normal toffee making.
