These sugar free Keto Sesame Snaps came about purely out wanting to recreate a favourite old occasional snack that I absolutely loved.

If you know the little packets of sesame snaps I am talking about you will possibly know how tasty they really are. 

I find it really ironic that the original product is quite often found in the health food aisle in the supermarket.

I mean really what is healthy in those at all?  Anyway, I was totally inspired to see a sugar free sesame snap recipe would turn out.

Here is all you need to make either of our keto sesame snap versions.

I have updated the original recipe with one that is hard like toffee but softens in the mouth to a chewable keto sesame candy bar.

Tips on making our low carb sesame bars

I have made this sesame snap recipe quite a few times, and it has worked beautifully each time. 

The thing you need to be careful with just like any toffee or praline is cooking it to the right timing that it will actually set hard. 

You can tell by the colour and smell (it starts to get that “caramelly” toasted smell).  It is then that you add the baking soda.

Simply place into the freezer once you have spread out onto the baking tray.

Low Carb Sesame Bar Variations

Now I know that this keto praline recipe can easily be substituted with different nuts, seeds and flavours.

You could easily flavour it up with any extract (licorice would be off the chain).

Liquid Stevia (butterscotch) and/or spices. I have used nutmeg, and a cinnamon one today, but there is no limits! 

Substitute some of the sesame seeds for shredded coconut, sunflower seeds, pepitas, or crushed almonds. 

Coat it in chocolate and dust it in nuts. 

It also makes a great gift, bagged up with a bit of ribbon and a tag. Plus it is great for the kids lunchboxes as it is nut free keto snack too!

  • Line a large 34 x 24 cm baking tray with baking paper.
  • Add the syrup and butter into a large microwave-safe bowl. Microwave (750W) for 7-8 minutes on high. Mixture should be thick and foamy.
  • Stir through remaining ingredients. Pour mixture onto baking tray. Spread to cover tray. Place into freezer.
  • Once the toffee has hardened break into pieces and transfer to an airtight container. Store in an airtight container in the freezer. The toffee will soften at room temperature and in your mouth.

Ingredients:
  • Sesame Seeds: Use unhulled or hulled sesame seeds.
  • Allulose or Monk Fruit Sweetener: Choose a sugar-free sweetener to add sweetness without the carbs.
  • Fibre syrup – you need to use a thick viscous fibre syrup like Nothin Naughty for this recipe. If looking at a substitute and the first ingredient is water, then it will not be suitable.
  • Butter or Coconut Oil: Use butter or coconut oil to bind and add richness to the sesame mixture.
  • Vanilla Extract (Optional): Add a touch of flavor with sugar-free vanilla extract.
  • Salt: A pinch of salt enhances the overall flavor of the sesame snap.
Storage:
  • Allow the sugar-free sesame snap to cool completely before storing. They can be kept in the freezer to be firm and toffee-like.
  • Store in an airtight container at room temperature or in the refrigerator.
  • Properly stored, the sesame snaps should remain crisp for about a week.

Instructions

  • Place sweetener, syrup, salt, and water into a large saucepan over medium heat and cook until sweetener is dissolved.
  • Stir in sesame seeds.
  • Cook, stirring often until mix goes a delicious caramel colour, approximately 5 to 10 minutes or until temp reaches 150℃, testing with a candy thermometer. Remove from heat immediately when you see it start to go dark caramel and you can smell the change in the mix.
  • Stir through vanilla and butter. Carefully stir in baking soda. (baking soda causes the mixture to foam)
  • Pour mix onto thermomat or oiled baking tray (no paper). Spread out to desired thickness. Leave to cool and harden. 
  • Break into pieces or score gently with the tip of a knife to cut into shapes.  Store in airtight container in cool place or refrigerator.
