The Ingredients

There are a couple of specialty ingredients you will have to buy to make this recipe work. Those are Whey Protein Isolate and Sukrin Syrups (US alternatives also include are Allulose Syrup or Vitafiber).

Whey Protein Isolate – I use Isopure WPI as it has a neutral flavour, no carbs and works perfectly in each of my recipes. Substitute a pea protein isolate for dairy-free Mars protein bar or another WPI brand of choice.

Sukrin Syrups Sukrin Australia is the only retailer of Sukrin products. The syrups, both in clear and gold, are a great substitute for honey or glucose syrup and maple syrup or golden syrup.

Vitawerx Milk Chocolate is absolutely delicious! Available in both milk chocolate and white chocolate it is as close as you can get to eating the real thing but with ZERO sugar.

Equipment

Ingredients 

Chocolate Nougat

Caramel

  • 200 g (1 cups) Caramel Fibre Syrup
  • 60 g (2 oz) butter
  • 80 g (0.3 cups) thickened cream

Coating

I used a silicone bar mould that is now discontinued. A silicone large icecube tray would be perfect for 32 x 4cm mars bites.

    Instructions

    Nougat

    • Place the syrup and chocolate into a large heat-safe bowl and microwave for 1 minute. Stir to combine and melt chocolate.
    • Combine chocolate mix with WPI and MCT oil and mix until combined. With a gloved hand massage mix until it is no longer grainy.
    • Spoon or break off pieces and push into moulds (will make 32 x 4cm moulds). Set aside.

    Caramel

    • Place all caramel ingredients into a large heat-safe bowl. Heat on high for 3 minutes. Carefully remove from microwave stir mixture and return to microwave. Continue to heat at 1-2 minute intervals until mixture looks very bubbly when you take out and when stir becomes thicker and more viscose. At this point, you will definitely smell a caramel scent.
    • Carefully spoon the hot caramel into your moulds. Refrigerate until set.
    • Melt chocolate and thinly coat each mars bar.

    Notes

    1. Any keto syrup sweetener used must have the main ingredients as a syrup (non-GMO corn or tapioca syrup). Allulose syrup is also a good alternative. There are some low carb syrups on the market that have the first ingredient listed under ingredients as water. Those products are not suited to this recipe.
    2. Chocolate, for the Milk Chocolate you can use any of the following zero sugar varieties, Vitawerx, or Well Naturally. Each of these brands offers a low carbohydrate, no sugar at all, and low-calorie option.
    3. The bars are best stored in an airtight container in a cool dry place. If refrigerated you will find that they are a lot harder, just like the real thing if stored in a fridge or freezer.
    4. All keto sweets should be a sometime food. This recipe could easily be made into smaller portions or drops similar to a Rolo.
    5. Please use caution when making the caramel. The instructions for the microwave are open in time as many microwaves have different wattage. In mine at 750W I find the caramel takes around 8-10 minutes. As it starts to get a little thicker you will notice if you check your spoon after 30 seconds you can gauge what “ball” or setting stage your caramel is at. For your convenience, I have included a video to show you the look and feel the caramel has when it is ready to pour.

      Is there any substitute for WPI? What is the reason for it in the recipe?

        They are protein bars Karen so that is why it is there. There really is no substitute as it creates the texture of the nougat.

        Hey Robert you can simply use the Sukrin Gokd syrup which has replaced the previous fiber syrup.

        Hi Deanna, I go a silcone mould from House. However if you just get an ice cube tray you can have 2 for 1 if they are just a 2cm tray

      Hi, I finally purchased the Isopure Whey Protein Isolate to makes these, only to realise that I don’t have MCT oil. Can you use melted coconut oil instead? Thanks!

        You can however if it is a firm set coconut oil it will make the nougat harder

      Oh, yeah. Amazing! I got my baking pack from Sukrin and made these IMMEDIATELY. I coated them with 1/3 Lindt 90% and 2/3 Well Naturally milk choc. I also had chocolate flavoured Whey Protein which worked well. Thank you!

      I made these and they are just soooooooo good. I used Lindt 90% dark chocolate for coating the bars and I love them 😍

        You can try a pea protein, or a whey. But there is no other substitutes in this recipe for protein powder
