Our sugar free Jupiter Bar recipe will take a few of you back to your childhood! A sugar free version anyway haha!
What is a Jupiter Bar you ask? Well for our non-Aussie fans it is a peanut caramel chew kind of bar. This is however a sugar free Jupiter Bar version, so a little different, but still absolutely delicious!
I was really inspired to make one after creating the Caramel Dulce de Leche. After a taste of this amazing caramel I knew a Jupiter Bar recipe had to be on the cards.
The Ingredients
You can find the Sugar Free Dulce de Leche by clicking the link. It is very simple and can be completed with only 5 minute prep time, and 22 minutes cooking. It makes the most perfect, thick caramel that sets perfectly for keto caramel bars.
Peanuts – I use peanuts but if you are legume-free go right ahead and substitute your favourite nuts or seeds for a nut free keto bar. Pecans would be brilliant in this recipe.
Pork Rinds – I am sure you are thinking pork rinds in a low carb caramel bar might be just a bit weird? Trust me, it only provides crunch (and a little salt and protein) but no porky flavour. For those of you who are a little hesitant, or for cultural reasons don’t eat pork, please just add any extra nuts, cacao nibs, or seeds to replace the rinds.
Coconut – my preferred coconut to use is desiccated. However, you can also use flaked or shredded coconut in your keto bars if you like

Oh my gosh! These are so good!
Iโm always weary of adding pork rinds to sweet recipes in fear that I would be able to detect the funky-ness. But I didnโt taste anything funky at all.
Thanks for posting this recipe- itโs a winner in my book!!That is awesome to hear Jenny. Thanks so much for the review.
