Homemade Sugar Free Gummies Bears

I am totally hooked on these 4-ingredient sugar free gummies. The recipe card has my favourite version of all time. Sugar Free Salted Caramel Cream Gummies! Damn they are so good!

Gummies are very easy to make at home and are a much healthier option than store-bought or jellies containing sugar.

locako sweeteners and inulin ingredients

With just 4 ingredients in the base recipe you can use any flavour you prefer to make your gummies.

Salted Caramel Monk Fruit Sweetener – I used the Locako vanilla or salted caramel monk fruit sweetener as both my sweetener and flavour in this recipe. You can use any sweetener or sugar alcohol you prefer. The caramel sweetener is a blend of erythritol, caramel flavour, monk fruit extract and Himalayan rock salt. And, yes it tastes caramelly! It has 90% fewer calories than sugar and is keto, coeliac and diabetic friendly.

Inulin – is a prebiotic and is purely optional.

Pasture Raised Gelatin – To be honest, this is the only brand I have used of unflavored gelatin since it was released. You can use any kind of gelatin you prefer but I find this one does not have an invasive odour or flavour in delicate desserts and keto gummi bears.

How To Make Them

Seriously this is one of the easiest sugar free gummi bears recipes. Even better as they double up as a salted caramel fat bomb too. 7g of fat per serve they are a little “filling” too.
Step 1. add the cream to a small saucepan and stir through the sweetener.

Step 2. sprinkle the gelatin over the top of the cream, but not stir. Leave it for 3-5 minutes for the gelatin to bloom.

Step 3. Cook stirring for 3-5 minutes or until the sweetener and gelatin has dissolved.

Step 4. Remove from heat and allow to cool for a minute. Whisk in inulin and salt. Pour into gummy moulds and refrigerate before removing from moulds. You might find it easier to pop them into the freezer for 10 minutes before removing from their mould.

Flavors & Variations

Jelly flavoured gummies – swap the cream to water and the sweetener to 1 packet of any low sugar (or zero sugar) jello crystals. Add 1.5 tbsp gelatin, 1/2 cup boiling water, 1 teaspoon inulin

Mix all ingredients together and pour into gummy moulds and refrigerate before removing from moulds.

To make a sour sugar free gummy bear simply mix 1/4 cup of powdered erythritol with 1-2 tsp of citric acid. Roll the gummies in the mixture to coat.

Ingredients 

  • 1/2 cup (½ cup) water yogurt, cream, or sugar-free iced tea or soft drink
  • 1.5 tablespoons (1 ½ tablespoons) sweetener
  • 1/4 cup (¼ cup) powdered gelatin
  • 1 teaspoon (1 teaspoon) Inulin or Acacia Fibre
  • Pinch (Pinch) salt flakes

Instructions

  • Pour cream into a small saucepan and stir through sweetener. Sprinkle gelatin over the top of the cream (do not stir) and leave to bloom, 3-5 minutes.
  • Place saucepan over medium heat and stir to combine. Continue to heat and stir intermittently until gelatin and sweetener has dissolved, 3-4 minutes. Remove from heat and add inulin and salt stir to combine.
  • Pour into small gummy moulds. Makes 24+ although really depends on your size moulds. Refrigerate before removing from moulds. You might find it easier to pop them into the freezer for 10 minutes before removing from their mould.

Notes

Dairy Free
Use with coconut cream or coconut yoghurt.
Flavour Variations
Use any sweetener and extract if you do not have Locako sweeteners
Low sugar jelly crystals and boiling water can be used in place of both cream and Locako sweetener.
Gelatin
Yes you can use any brand of gelatin.
To substitute gelatin leaves. Dissolve 6 sheets in cold water and add to cream and cook until dissolved. Conversions can be found here.
Store in the fridge for up to 10 days in an airtight container. Gummies will soften if left at room temperature for too long.
Measuring
This recipe is made using a US Customary tablespoon and cups. There is a difference in ml per tablespoon for our Australians if you use an AU tablespoon.

    I made a version inspired by the measurements listed. Instead of the sweetener, I used the same amount of Bulk Nutrient’s hydrolysed collagen peptides in banana flavour. They’re pretty good!

      There is enough gelatin in these store outside of the fridge Wendy but I do prefer 2-3 tbsp in mine so add more if you wish.

    I am hooked on these sugar free gummy bears. I have now made all the versions and one using pure anise extract and hoppers natural black colour to make a licorice batch.
    These are so easy and a great fat bomb with the vanilla yogurt and salted caramel gummies.
    My grandkids loved the sugar free jelly gummies and even helped make them . No sugar treats for them on my watch!!
