I am pretty excited about these delicious and playful looking Snow Globe Cupcakes. Not completely an original idea but I sure don’t see any being made that are low carb and sugar-free!

This Christmas it wont be hard to win the love and affection of everyone with these keto cupcakes. Not only have made cupcakes into snow globes but we have made the best tasting keto cupcakes into Keto Snow Globe Cupcakes! Yay!

I have done my taste testing and you wont be disappointed. For the time strapped cook, I have also added some alternative recipes, or ways to do these with less fuss come your day making them.

SNOW GLOBE CUPCAKES

I have absolutely no idea why I was thinking about making something like this but I was. Lately there has been a lot of cake making and I was thinking about Christmas and if I could make a cupcake into a snow globe. So I googled to see if anyone had done it. Tada! I found two (both globe recipes are the same).

Anyway the idea was my own but the globe I have just used Sugar Heros version. Originally I was thinking of a sugar-free toffee dome but the gelatin is so much easier for most cooks.

I had a lot of fun making these so here goes some of my take aways from making them and some great tips.

HOW TO MAKE THE GLOBE

First up I will say start making these a day or more ahead. That way you will have them ready and wont be stressed out. They do take 24 hours to completely set,. and can be stored days ahead in an airtight container at room temperature.

This is a fun task to do with the kids. I did make a bit of mess with some balloons popping. Hence my lengthy tips. Honestly though this is not a hard thing to make, nor does it take that long. It is just good to know what you are doing first and check all the tips.

This would also work making a super large dome on the bottom of a bowl for a large “scenic” snow globe cake.

Blow up the balloons until about 10cm wide and secure. You may need an air compressor to fill.

Attach each balloon to the blunt end of a wooden skewer, using sticky tape. Make sure you add a pie of sticky tape at the base of the balloon. This is so you can pop the balloon later through the sticky tape for a slow deflate. Place each skewer into polystyrene or similar to keep upright and not touching. I used an old flower arrangement sponge to hold mine up.

Spray the balloon very lightly with olive oil spray. Not too heavy as the gelatin will not stick otherwise. I finished with a light brush over with a paper towel to ensure it was not too oily.

Fill a large bowl with cold water and add gelatine leaves separating them as you add. Leave to soak for 10 minutes.

Remove gelatine leaves and place in a small saucepan with 1/2 cup of the soaking liquid, sweetener and rosewater.

Place over low heat and stir until dissolved. Pour into a small to medium bowl and allow to cool to room temperature. It is important to not try and dip the balloons when the mix is too warm or they will burst.

Dip each balloon in the cooled gelatine. Using a spoon to ladle the mix all over the balloon to a thin coat. Allow the excess mix to drip back into the bowl. Place upright in the polystyrene ensuring no other balloons touch each other as the gelatine will stick. Repeat with all balloons. Allow to stand 10 minutes before dipping again. If your gelatine mix firms up, just reheat and cool and start again.

Leave balloons to set 24 hours.

To separate the globe from the balloon; prick the balloon a couple of times through the sticky tape for a slow deflate. The balloon will slowly deflate inside the gelatine globe. After it has deflated carefully trim the base of the balloon off and pull out any remaining balloon. Trim the edges of the globes to tidy them up.

The Ingredients

I have made two different kind of keto cupcakes for these keto snow globe cupcake recipe. With many suggestions from our Facebook tribe I chose a mud cake and a gingerbread. You could just as easily use any keto cupcake mixes if you want. Great brands like 180 Cakes can make it easy for you as well. I love creating my own flavours and the ingredients are all readily available so no stress anyway.

Anyway here is what I use in the cakes.

70 g light tasting olive oil – I use any neutral oil like Bertolli or even supermarket brands

50 g sweetener – I use either Sukrin:1, Monkfruit or Natvia

200 g almond meal

4 large eggs

60 g sour cream

1 teaspoon vanilla extract

2 teaspoons baking powder, I always use Bobs Red Mill Double Acting Baking Flour – it is the best without a doubt

GINGERBREAD CUPCAKES

2 teaspoons cinnamon

1 teaspoon ground ginger

1/4 teaspoon ground cloves

1/4 teaspoon freshly grated nutmeg

CHOCOLATE MUD CUPCAKES

60g sugar-free dark chocolate

1 tablespoon unsweetened cacao

30ml whiskey (optional) Whiskey adds depth to any mudcake in my opinion. You could also use any kind of spirit to do the same.

VANILLA BUTTERCREAM

120 g powdered sweetener, I use Sukrin Melis

170 g butter

300 g cream cheese

2 tablespoons thickened cream

Hot Tips

So as mentioned above I recommend making part or all of the snow globe cupcakes ahead of the day you want them for. In so many ways this relieves stress and makes it more of an enjoyable cook anyway.

Make sure your toys to go inside are small enough to fit inside. You could make your own edible figurines for added fun. Personally, I am not great at fiddly things but even using a snowman jelly mould or baking gingerbread men to go inside would work perfectly in the snow globe cupcakes.

Definitely allow the time for the gelatine to cool to room temperature. I had a few burst and it was messy lol.

Also, don’t forget to cover a part of the base of the water balloon with sticky tape to have a slow deflate. If you pop fast it makes the globe cave in.

Ingredients 

OPTIONAL FLAVOURS

    GINGERBREAD CUPCAKES

    • 2 teaspoons (2 teaspoons) cinnamon
    • 1 teaspoon (1 teaspoon) ground ginger
    • 1/4 teaspoon (1/4 teaspoon) ground cloves

    • 300 g (10.5 oz) cream cheese softened and cubed
    • 2 tablespoons (2 tablespoons) thickened cream plus extra if needed for a smooth buttercream

    SNOW GLOBES

    • 24 (24) sheets of gelatine I use MacKenzies brand from Woolworths
    • 1 tablespoon (1 tablespoon) sweetener
    • 1/2 teaspoon (1/2 teaspoon) rosewater or any flavour extract you want
    • Water bomb balloons
    • 12 (12) small Christmas decorations to go inside the snow globe

    Instructions

    Start this recipe the day ahead

      CUPCAKES

        CONVENTIONAL METHOD

        • Preheat oven to 170℃. Line a 12-hole cupcake pan with cupcake liners.
        • Mix all ingredients in a stand mixer until combined. Spoon mix into cupcake liners. Bake 15-20 minutes or until cooked through. Cool on wire tray until cool.

        THERMAL METHOD

        • Preheat oven to 170℃. Line a 12-hole cupcake pan with cupcake liners.
        • Add ingredients; mix 1 min/speed 3. Follow from Step 3 above.

        LEMON BUTTERCREAM

          CONVENTIONAL METHOD

          • Mix all buttercream ingredients in a stand mixer until light and fluffy. Pipe onto cupcakes. Top with Christmas decoration and snow globe.

          THERMAL METHOD

          • Mix all ingredients 1 min/speed 5. Scrape down sides of mixing bowl. Mix for further 1 min/speed 5 or until smooth and fluffy. Follow from Step 2 above.

          1. This recipe is definitely best started the day before. All components can be made on the same day and assembled as needed.
          2. The gelatin globes will keep at room temp in an airtight container.

          4. Best to make the globes outdoors just in case the pop. Gelatin tends to fly about haha!
          I use a 15ml tablespoon and 250ml cup for measures. You can use the calculator to convert ounces in a cup if needed. Please note that there is also a conversion from metric to US Customary button under the list of ingredients.
