Mexican Easy Guacamole – low carb recipe
My Mexican Easy Guacamole is so delicious! How can it not be? Anything with avocado is amazing right?
There are so many versions of guacamole, even in Mexico. I am happy to try every single one of them! If there is one ingredient that is in my shopping trolley every week it is avocados. Whether they are $10 each or 10 for $1.
Where my love of all things avocado began…
It is funny that when I was younger and totally health conscious I absolutely hated avocado. When I was about 18 I went and visited my friend Jenni who I literally was pushed in the pram with, and she made me an amazing crab and avocado soup (knowing that I only ate seafood and no meat) and I was completely smitten! Since then I have eaten avocados every week of my adult life.
Now that I also know how good it is for me as a rich source of fat, I can enjoy even more every day.
Moral of the story…. even if you don’t like something (like avocado) just keep trying… your palate CAN change and you can grow to love some amazing foods. I have to say, I am not sure how all the Mexican food I have eaten over the last couple of decades would taste as good without a healthy dollop of guacamole!

Mexican Easy Guacamole
- 2 avocados
- 2 cherry tomatoes diced
- 1 tbsp onion diced
- fresh coriander leaves
- 1 tsp chipotles in adobo diced
- 1 tbsp lime juice
- Mix all ingredients together and serve as your favourite side dish, on a toastie, with crackers....oh there are so many serving options.
