These Keto Vegemite and Cheese Scrolls are seriously “all that and a bag of chips.” Even those of you who are gluten intolerant can now enjoy gluten free Vegemite! Hurrah!

Anyway aside from that these are insanely good! Make sure you have some friends or family nearby so you don’t eat too many.  This is a problem when you make tasty keto cheese scrolls.

KETO VEGEMITE AND CHEESE SCROLL INGREDIENTS

These keto Vegemite and cheese scrolls are so simple to make and most ingredients should be found in all local supermarkets. For our Mad Cooks in other countries you can use any of your favourite spreads or toppings as a substitute for the Vegemite if you wish.

BAGEL DOUGH

  • 250g Mozzarella
  • 65g cream cheese
  • 1.5 tbsp baking powder, I use Bobs Red Mill Double Acting Baking Powder
  • 1 teaspoon xanthan gum
  • 2 eggs
  • 150g almond meal
  • salt flakes

TOPPINGS

  • 100g grated cheese – just use whatever you prefer
  • 2-3 teaspoons of Vegemite (or alternatives)

HOW TO MAKE KETO VEGEMITE AND CHEESE SCROLLS

Knowing how to make a keto savoury scroll is a good thing. Using this simple dough you can make all different types of scrolls when you need to.

When I make them I just lay out the keto bagel dough on a large silicone mat. Firstly push into a rectangle with your hands and then roll out into a large rectangle approximately 20 x 30cm and about 2cm thick.

Spread the keto bagel dough with the Vegemite (to your preferred taste) top with cheese and then roll from the long end until you have a long sausage.

Cut into 8 even pieces and place onto the prepared baking tray. bake until cooked through and golden. (I do use a fan-forced oven so it could take longer depending on your oven type).

Use other toppings like cream cheese, goat cheese, bacon or jalapeños just to name a few.

Ingredients 

  • 1 batch (1) Fathead Dough click for recipe link
  • 2-3 teaspoons (2-3 teaspoons) Vegemite Aussiemite or other
  • 1 cup (1 cup) grated cheese I use grated tasty or cheddar cheese

Instructions

CONVENTIONAL COOKING METHOD

  • Preheat oven 180℃ fan/200°C static (400°F). Line a large baking tray with baking paper
  • Flatten out prepared fathead dough into a large 30 cm x 20 cm rectangle.
  • Spread with Vegemite and top with cheese. Roll into a tight sausage lengthwise. Cut into 16 equal pieces. Place onto the prepared baking tray. Bake for 15 minutes or until lightly golden.

Storage
Store Keto Vegemite and Cheese Scrolls in the fridge for up to 5 days or freeze up to 2 months.
Varations
Vegemite can be omitted or swapped for any toppings like bacon or feta.

    They look amazing but I followed recipe exactly but seems like the insides are still wet/gloomy even though I cooked them until very brown, would they still be edible?

      Hi Emma, I am sorry to hear your scrolls didnt work out. I would say something went wrong somewhere along the steps for you as this recipe is rather old and has been made a lot of times by myself and many others. Given I am not sure what happened if they taste good, eat it.

    I have made fathead “things” for a few years now….never have had this recipe that calls for so much more baking soda and xanthum gum….or all the “kneading”……this procedure made WONDERFUL rolls !!!!!

      Hi Anri, xanthan gum helps to either combine ingredients or create gluten like structure to breads like this one. Depending on where in the world you are located xanthan gum is available in the gluten free aisle of most supermarkets.

    Hey, these are in the oven now…the dough was SUPER sticky so rolling it and then cutting it without it sticking to everything was near impossible! Putting a bit of water on my hands and knife helped it not stick a little but has anyone else had this problem?…

      Hi Kim, you need to work the dough in the bowl first until it becomes no longer sticky and turns into an actual dough. I have added my video that I did for the cheese and bacon scrolls to show how to make the dough not sticky if you go back to the recipe you can view it.
