I am kind of loving these super simple no-fail cheesecakes, for that little sweet hit you need occasionally, or for that extra bit of fat in your diet.

This version is beautiful.  Dial up the peanut butter (or any nut butter) to your own taste.  The chocolate layer is to die for.  I have to confess I just ate some.

  • 30 g butter melted
  • 1 tsp vanilla extract
  • 5 g cacao unsweetened
  • 60 g almond meal or hazelnut
  • Optional 4 drops caramel liquid stevia


Layer Flavourings

  • 20 g peanut butter or any nut butter
  • 50 g dark chocolate 80%, melted


  • Preheat oven to 180℃


  • Mix all base ingredients together
  • Place into 12cm spring form tin
  • Cook 6 minutes
  • Cool


  • Add sweetener to mixer
  • Blend 10 seconds / speed 7
  • Add rest of filling ingredients
  • Mix 1 minute / speed 5.5
  • Pour 120g of mixture into separate bowl
  • Mix with peanut butter
  • Add melted chocolate to rest of filling
  • Mix 20 seconds / speed 5
  • Spoon one half of chocolate mixture on top of base
  • Smooth off the top
  • Top with peanut butter mixture
  • Smooth over
  • Top with additional layer of chocolate filling and refrigerate until set


If you don't have a Thermo Mixer this is very easily made with any mixer, or by just using a bowl and a spoon, and some good old fashioned elbow grease.

    It’s delicious frozen [or slightly thawed], just curious about the raw egg in the recipe, just wanted to be sure there’s not a step missing…as in a ‘baked cheesecake’ 🎂

      Hi Bern, no steps are missing. The raw egg is optional and you can use pasteurised eggs. If anything like a mayonnaise the egg can be “cooked” via mixing action or the acid in sour cream

    Does this serve 10 people ? 12cm springform tin? Quantities seem very small.

      Hey Lorraine, for these macros yes. This was created back in the day when I was a bit anti-dessert. Now I go kind of bigger lol. The recipe can be tripled for a large springform that will serve 16 larger serves.
