No need to grab a takeaway dinner when you can make this low carb egg roll in a bowl recipe. Super-fast and easy this low carb dish is a favourite when I am short on time and ingredients.

This dish is kind of a Chinese American fusion. Based on an Egg Roll minus the wrapper. An egg roll is basically a spring roll and uses a wheat-based wrapper. For a low carb or keto egg roll recipe one just loses the wrapper.

Oh, and if you are asking, “What is Crack Slaw?” Crack Slaw is just another name for the keto egg roll in a bowl. Basically because it is so addictive and really is a kind of slaw.

Low Carb Egg Roll in a Bowl Ingredients

What do you need to make a low carb egg roll in a bowl? Honestly, this recipe can be a very basic. I added a few extra ingredients (as I like to do) to make it tastier than most.

  • Ground meat. I like a pork and beef mince combination for my egg roll recipe. You can use any ground meat of choice or a plant based mince for a keto vegan recipe.
  • Coleslaw mix. In this particular recipe you can see I just used plain cabbage, very little carrot cut into thin small stick and diced celery. Feel free to just use cabbage to keep the carbs low or grab a packet of slaw mix from the vegetable section at the supermarket.
  • Avocado Oil. I like to use to avocado oil in my cooking but any fat of choice can be used.
  • Garlic and Ginger Paste. If you know me, I love Gourmet Garden paste range. Otherwise use fresh ginger and garlic.
  • Vegemite. The perfect ingredient in keto Asian recipes.
  • Seasonings. I use a mix of black and white pepper and salt flakes.

How to make Keto Crack Slaw

Low Carb Egg Roll in a Bowl is a simple quick stir fry. It is so easy to make.

As you can see below it as simple as browning the meat. Add the garlic, ginger and Vegemite. Then stir through the vegetables and add the remaining ingredients.

I cook until the cabbage has just softened but still has a bit of bite to it.

Divide between serving bowls garnish and serve.

Ingredients 

  • 1 tablespoon (1 tablespoon) avocado oil
  • 450 g (2 cups) pork mince (ground pork) or pork/beef mince combination
  • ½ teaspoon (½ teaspoon) white pepper
  • Salt and black pepper to taste
  • 2 tablespoons (2 tablespoons) ginger finely minced
  • 1 clove (1 clove) garlic finely minced
  • 1 tablespoon (1 tablespoon) Vegemite Marmite (optional)
  • 3 1/2 cups (3 1/2 cups) shredded cabbage or kale or coleslaw mix
  • 1 tablespoon (1 tablespoon) gluten free tamari or coconut aminos
  • 1 teaspoon (1 teaspoon) sesame oil
  • 1 teaspoon (1 teaspoon) toasted sesame seeds
  • 2 tablespoons (2 tablespoons) green onion finely sliced
  • 1 (1) red chilli deseeded and finely sliced, or ½ teaspoon red chilli flakes
  • Fresh coriander leaves and lemon wedges to serve

Instructions

CONVENTIONAL METHOD

  • In a large wide frying pan or cast-iron pan heat the avocado oil over medium-high heat. When hot add the ground pork/beef. Break up any clumps with a silicone spatula and season with white pepper, salt and black pepper. Continue frying until lightly golden brown.
  • Add ginger, garlic and Vegemite (if using) and stir to coat the meat. Add the shredded cabbage (or coleslaw mix) and stir to mix through evenly. Reduce heat slightly and continue to cook until the cabbage begins to wilt.
  • Stir through the tamari and sesame oil.
  • Divide between 4 serving bowls. Sprinkle with sesame seeds, green onions, chilli, and coriander leaves. Serve with lemon wedges.

THERMAL METHOD

  • Add avocado oil to the mixer bowl and heat 3 min/120°C/speed 1.
  • Place mince, white pepper, salt and black pepper into the mixer; cook 5 min/120°C/reverse/speed 1.
  • Add ginger, garlic and Vegemite (if using); cook 2 min/100°C/reverse/speed 1.
  • Add the shredded cabbage (or coleslaw mix) and stir to mix through evenly; cook 3 min/100°C/reverse/speed 1.
  • Stir through the tamari and sesame oil.
  • Divide between 4 serving bowls. Sprinkle with sesame seeds, green onions, chilli, and coriander leaves. Serve with lemon wedges.

Notes

INGREDIENTS
1. Avocado oil is delicious, but you can use any oil of preference.
2. I use a mixture of pork and beef mince, but any meat can be used in this recipe. For a keto vegan egg roll in a bowl substitute plant-based mince or a mixture of mushrooms.
Vegemite adds umami to this dish. It is a yeast-based spread and is now available in a gluten free form. This ingredient can be omitted or reduced for a less salty flavour.
3. Your local supermarkets have loads of different slaw mixes if preferred to buy than make your own. Cabbage can be used without any carrot if preferred for a slightly lower carb content.
4. Tamari and coconut aminos are available in select supermarkets in the gluten free aisle and/or Asian foods aisle.
COOKING
5. I use a Le Creuset Balti dish to cook my egg roll in a bowl. It is a great conductor of heat at a moderate temperature and holds all the ingredients in.
STORAGE
6. This recipe is just as good cold as hot. Store in the fridge for up to 3 days.
7. This dish can be frozen before and after cooking.
SERVING SUGGESTIONS
8. Low Carb Egg Roll in a Bowl can be served in lettuce cups or wrapped in any green leaves for a tasty San Choy Bau style dish.
9. Alternatively, serve as part of a Mason Jar Salad with fresh chopped avocado, crispy lettuce and thinly sliced red onions.
10. Another way to serve that is delicious is wrapped in our Mad Creations Soft Wraps. In fact, you could very well wrap the mixture in the wraps and fry for a low carb egg roll.
