Sugar Free Cranberry Sauce

A simple but very delicious low carb cranberry sauce that is very easy to make with just a few ingredients.

Homemade cranberry sauce is amazing! I kid you not this recipe tastes better than anything you will find in a jar from the store. Make your own sugar free cranberry sauce that the whole family will love and never know just how healthy it is!

Why You’ll Love this Recipe

One pot – pop it all in one pan and cook. A quick and simple fuss-free recipe.

Low Carb – even with the small amount of orange juice and cranberries this sauce is still very low in carbs. Per tablespoon, it is only 1.5g net carbs.

It’s healthy – this low carb cranberry sauce is sugar free, keto and diabetic friendly.

Freezer Friendly – make ahead of time. Yes, keto cranberry sauce can be frozen. Freeze in a ziplock bag or airtight container. It can also be frozen in smaller ice cube portions and you just take some out of the freezer as you need it so there is no wastage.

bowls of cranberries, cranberry sauce, and oranges

This sugar free healthy cranberry sauce has only 6 main ingredients… really. Some are optional is just depends on your dietary needs, keto lifestyle choices, and feelings on natural sugars.

Here is what you will need to make cranberry sauce without sugar.

SWEETENER OF CHOICE– I choose to use xylitol or allulose. Neither of these sweeteners crystallise when chilled. TheSukrin Melis powdered erythritol, granular erythritol, monk fruit or Natvia can be used but you may have some crystallisation when refrigerated. For a paleo cranberry sauce recipe substitute coconut sugar.

STAR ANISE – Adds a delicious mild aniseed flavour to the sauce

CRANBERRIES – Fresh or frozen works fine. In Australia, I don’t think I have seen fresh ones but frozen is often around from the Thanksgiving – Christmas time in our local supermarkets

RED WINE, WHISKY, OR BRANDY – Use any of these to deglaze the pan. They can be omitted if you do not consume alcohol. Just add some water in its place

ZEST OF 1 ORANGE – Orange zest adds a delicious tanginess and balance to the low carb cranberry sauce. You can use lemon or I would recommend orange extract.

ORANGE JUICE (VEGETABLE STOCK OR WATER) – At 5g of natural sugars in 60g of orange juice some may want to omit this from the sauce. I rolled with it in my low carb cranberry sauce recipe.

How To Make It

melting sweetener in a frying pan
  • Place sweetener in a large wide pan over medium high heat. When sweetener is melted add star anise and continue to cook for a further 5 minutes or until a caramel begins to form.

  • Salt and pepper to taste
  • 1 tablespoon (1 tablespoon) apple cider vinegar
  • 1/4 cup (0.25 cup) dry red wine whiskey, or brandy
  • Zest of 1 orange
  • 1/4 cup (0.25 cup) orange juice or water

Instructions

  • Place sweetener in a large wide pan over medium high heat. When sweetener is melted add star anise and continue to cook for a further 5 minutes or until a caramel begins to form.
  • Add star anise and continue to heat the sweetener for another 2 minutes to infuse the star anise.

  • Add remaining ingredients and continue to cook until thick and jammy.
  • Remove from heat. Discard star anise and store in an airtight jar.

Notes

Some sweeteners may form crystals upon cooling. Powdered sweetener does reduce this affect.
To remove the crystals just slightly heat or leave at room temperature to melt.
STORAGE
Cranberry sauce will keep in the fridge for up to 2 weeks.
SUBSTITUTES
Cranberries can be substitutes with any low car berry but will be slightly sweeter.
The orange juice added in this recipe adds 1g extra net carb to reduce to 3g net carb per 2 tbsp serve just use water. I just love the flavour and personally I would only use half of the serving size anyway.
