What You Will Love about this Recipe

  • LIKE THE REAL THING – the best bit about these keto rolls is that they really are like real bread rolls. This is not a psyllium husk roll that looks good but tastes like a ball of hay. They taste amazing and are still only 2g net carbs per serve.
  • HEALTHY – Reducing the carbs these rolls are a much healthier option.
  • EASY TO MAKE – we all love easy recipes, don’t we. This recipe will not disappoint.

The Ingredients

  • Oat Fiber is NOT Oat Flour. No matter what your local health food shop tells you. Oat Fiber is made with the husk of the oat (the groat). It contains no carbohydrate and helps keep this keto bread recipe super low in carbs.
  • Vital Wheat Gluten flour contains gluten. This recipe is not for those low carb or keto followers who do not consume grains. Gluten Flour is a low protein flour that is much lower carb than wheat flour.
  • Flax meal. I use golden flax meal. Golden flaxseeds are best freshly milled for any low carb baking. Always store in the fridge or freezer after opening as flax can quickly go rancid.
  • Inulin is used as a sugar substitute for activating the yeast. Sugar or honey can be used in its place to activate the yeast. It should be noted that yeast will consume the carbs from sugar or honey if used. Inulin is a prebiotic insoluble fibre sourced from plants. It has sweet properties naturally occurring and can be used to activate yeast and used in baking and sweets. Other keto sweeteners like xylitol and erythritol will not activate yeast.

Tips and How To Make Them

  1. Activating the yeast. The water must be warm to activate yeast. Add the inulin or sugar/honey to help activate. Cover the bowl with cling film and/or a silicone mat and leave somewhere warm to activate. You will know when it is ready as the top will be thick and foamy.
  2. When combining ingredients never add the yeast and salt together. Salt kills yeast. If you follow the list of ingredients in order of the recipe you will be safe.
  3. Knead for a minimum of 5 minutes. The dough should be soft but not sticky. If the dough is too wet add a little more flaxmeal to help absorb the moisture.
  4. The mix makes roughly 700g total mass. Cut into 10 x 70 g pieces and roll. Watch the video within the recipe for a simple rolling technique.
  5. Cover and place in a warm place to allow the buns to double in size. Leave plenty of room on the baking tray for them to rise.
  6. Season. I season with a mix of nigella seeds, sesame seeds, celery salt and onion granules.
  7. Bake and cool on a wire rack before slicing and serving.

  • 70 g (2 ½ oz) butter cubed

  • Combine inulin, yeast and water in a small bowl. Leave in a warm place until yeast activates. This can take 10-20 minutes. It should be thick and foamy on top
  • Add all the ingredients (in recipe order) to a mixer, including activated yeast. Using dough hook attachment knead dough for 5 minutes on a slow speed.

  • Preheat the oven to 170℃ fan/190°C static/375°F.
  • Sprinkle the rolls with sesame seeds. Bake for 30-35 minutes. Cool on wire rack.

  • Mix all ingredients to mixer, including activated yeast; mix 5 min/dough setting. Follow from step 2 above.

Notes

Ingredients and Substitutes
Vital Wheat Gluten: This is the star of the show, giving your rolls structure and that classic bread-like texture just like our popular Low Carb Bread recipe. No direct substitute for this one, so it’s a must!
Instant Yeast: You can use active dry yeast instead, just make sure to proof it in warm water first. The conversion is 1:1.
Oat Fiber: Don’t confuse this with oat flour; it’s a different ballgame. If you can’t find it, try psyllium husk powder for a similar texture.
Almond Meal: Feel free to use almond flour if that’s what you have on hand, but almond meal will give a slightly coarser texture.
Inulin: If you don’t have this soluble fiber, a touch of ugar or honey can be used to activate the yeast. If substituting use 1 teaspoon.
Eggs: For a vegan twist, swap eggs for flax or chia eggs. One egg equals one tablespoon of flax/chia mixed with three tablespoons of water.
Variations:
Get creative with toppings like sesame seeds, poppy seeds, or even a sprinkle of cheese.
Add herbs and spices like rosemary, garlic powder, or onion flakes for extra flavor.
Roll the buns into 24 smaller balls to make keto dinner rolls.
Tips for Success:
– Be patient during rising; it’s key for a light, airy texture.
– Handle the dough gently to avoid deflating it.
How to Store Low Carb Keto Buns
– Keep in an airtight container at room temperature for up to 3 days or freeze for longer shelf life.
How to Serve Keto Buns
– Perfect for sandwiches, burger buns, or as a side to your favorite soups and salads.

These were awesome!!! I made 20 rolls to try as dinner rolls and baked at 22-26 mins. Delish with butter fresh out of the oven and I can see them as slider buns. Thanks so much for the recipe!!

Fabulous recipe, so much alike standard bread rolls. Truly delicious. Great on its own smudged with butter or as a toast or quickly reheated in a sandwich press. Thanks Megan, 😊 one of the best bread rolls recipes out there!

So, so, so tasty! I swapped oat fibre for psyllium husk as that’s what I had.
Dough was awfully hard to work with, almost impossible to roll and I had to wet my hands each time, knead it a bit to get more wet texture and it somehow worked. I’m wondering if it’s because psyllium husk, I used 1:1 ratio.
I’m pastry chef and baker, made thousands of rolls and breads in my life, but keto baking is something very new for me.
Anyway, they taste like heaven. My keto hot-dog lush, great recipe

I’m very new to keto baking and it’s like a whole new world has opened up for me. I’m retired. I want to keep slim and now I have the time to create a new way of eating. If not now, when! For the first time in my life I am the owner of a stand food mixer and a dough hook! This is the recipe I tried with my new mixer and it all worked out beautifully. Many thanks and best wishes Megan. You’re an inspiration.

Hi Megan. With this recipe, can I sub flaxseed meal for almond flour? My son and I don’t like the grainy texture from any type of meal.

  7. Dale Olstinske

I love this recipe, the bread and buns come out great. I’d like to make cinnamon rolls with a yeast dough. With the addition of more sweetener, do you think this would work?

  8. Lindsey

What can I sub the almond with?

  9. Corine

Is this recipe asking for one pack of active yeast?

  10. Eileen

I love the look of this recipe, apart from the 1 1/4 cups vital wheat gluten. I need to be gluten-free, otherwise my knees get extremely painful and I can’t walk.
So Megan – what can I use instead of the vital wheat gluten, please? “Dr Google” suggested Orgran, who have a product called “OrgraN Gluten Substitute”, but I’m having trouble finding somewhere that stocks it in Australia. IF I am able to find it, how much of this would I need to use in this recipe? Surely not the whole 1 1/4 cups! I do hope you can help.

    1. Megan Mad Creations Hub

Hi Eileen, I am sorry I have not heard of the ingredient you mentioned. I will say that after creating more than 100 other gluten free breads that nothing mimics gluten that is gluten free in a loaf.

  11. Veronica

Can I just need with my hands if I don’t have a mixer with a bread attachment?

I love bread! I went on the keto diet and went through withdrawals, until: I found your recipe. It is so good! Great for hamburgers, sandwiches, dinner rolls. Can I use it to make pizza? Any changes? I am still losing weight and I have 1 each day. I also cheated a little bit and only rolled 8 rolls. 3 net carbs rather than 2. Superior Rolls Thank You.

I made a batch and divided the dough. I used half for the most soft and lush cinnamon buns and the other half for a pizza. I used a pizza stone and it was fabulous!

    1. Megan Mad Creations Hub

Sounds delicious Lisa. So happy they worked out fab.

  14. Kirstyn

Hi Megan, Can you make this recipe in a bread machine? So activate the yeast first and then pop everything in the bread machine, let it do its thing so knead, rise, knead and then take the dough out, roll into rolls, rise and then bake in the oven? Trying to think of ways to have bread rolls for Christmas. Thanks

    1. Megan Mad Creations Hub

Hey Kirstyn, yes of course you can. Go for it!

  15. Lizel Schwartz

In stead of activated yeast could you try instant yeast?

    1. Megan

Hi Lizel, the yeast used is instant dried yeast that has been activated to get the loaf rising quicker. Is this the yeast you are mentioning or fresh yeast?

  16. mercy

when the recipe is converted to US measurments it says:
    1 cup warm water
    2 teaspoons inulin
1 1/2 tsp yeast 1 sachet dried yeast
    2 eggs
    Pinch salt flakes
1/3 cup (plus 2 tbsp) golden flax meal or pepita meal if you do not like the flax seed taste
    1/3 cup almond meal
1/2 cup oat fiber click for supplier
1 1/4 cup vital wheat gluten click for supplier
    4.73 tbsp butter cubed
    1/4 teaspoon xanthan gum

is this correct? thank you i cant wait to try the recipe

    1. Megan

Hi Mercy, yes those measurements can all work. To make the butter easier just go with 4 tbsp. I have used up to 1 tbsp of the insulin to activate the yeast as well

  17. Anne B.

This is the best ketosis bread ever! I’ve probably tried them all. I’ve made it several times and it never fails.

    1. Megan

Thanks Anne. I am glad you enjoyed it.
