Step 1. Preheat oven to 200℃ fan/220°C static/425°F. Place onion, parsley and seasoning into a food processor; pulse until finely chopped. Add remaining ingredients (except fathead); pulse until combined.
Step 2. Shape the mixture into a 40 cm long log.
Step 3. Roll out the fathead into a large rectangle (the same length as your log) about 20 cm wide.

Step 4. Place the sausage along one edge and roll to enclose. Cut into portions or slice into 2-4 larger pieces (they can be cut smaller after baking).
Step 5. Bake 15 – 18 minutes or until cooked through and pastry is golden brown.

- Salt flakes and black pepper
- 1 batch (1 batch) Fathead Dough
Instructions
CONVENTIONAL METHOD
- Preheat oven to 200℃ fan/220°C static/425°F.
- Place onion, parsley and seasoning into a food processor; pulse until finely chopped. Add remaining ingredients (except fathead); pulse until combined.
- Shape the mixture into a 40cm long log.
- Roll out the fathead into a large rectangle (the same length as your log) about 20cm wide.
- Place the sausage along one edge and roll to enclose. Cut into portions or slice into 2-4 larger pieces (they can be cut smaller after baking).

THERMOMIX METHOD
- Preheat oven to 200℃ fan/220°C static/425°F.
- Place onion and parsley into mixer; chop 3 sec/speed 7. Scrape down sides of bowl.
- MIX – Add remaining ingredients and season well. Mix 10 sec/speed 3. Scrape down sides of bowl and repeat 10 sec/speed 3. Follow from step 3 above.

Love these sausage rolls. I make the with chicken mince instead of lamb and they are perfection!Is there a substitute for the Mozzarella? My family are not great cheese eaters. Iโd love to make some of your recipes but not sure they would eat anything with a cheesey flavour. I love them !!

Please excuse my IGNORENCE… but I want to make this recipe and a little confused as it says serves 4=5 saussage rolls.
But then it says cut sheet it into 8 rectangles and I cant figure it out… #feelslikemonday lol.
