What is Lamb Keema Curry?

Lamb keema curry, or kheema, is a flavourful Indian dish made with ground lamb (or other meats), aromatic spices, onions, and tomatoes. The word “keema” refers to minced or ground meat, making this curry very easy and quick to make, and family-friendly.

The Ingredients

  • Ground Meat – Lamb is traditional, but minced meat e.g. beef, chicken, or turkey can be used.
  • Spices – Common spices include cumin, coriander, turmeric, chilli powder (cayenne), and garam masala. I also love to add a tablespoon or two of dried fenugreek leaves if you can get them. You can substitute Malaysian Meat Curry Powder or Madras Curry Powder instead of all the spices.
  • The Holy Trinity – garlic, ginger paste, and onions adds loads of flavour to the dish. Plus, the addition of sliced green chillies keeps it traditional.
  • Sour Cream / Yogurt Mint Sauce – use your favourite seafood herbs. I love fresh parsley, coriander leaves or thinly sliced garlic chives.

How To Make Curried Lamb Mince

Step 1. Place the mint sauce ingredients into a food processor and pulse until smooth. Taste and adjust the seasoning or spices to taste. Chill until needed.

Step 2. Heat ghee in a large skillet over medium heat. Add onion, garlic, ginger, and chilli; sauté until the onion softens, about 1-2 minutes.

Step 3. Turn the heat up to medium-high. Add the garam masala, paprika, turmeric, coriander, cumin, and cayenne; stir to combine, and cook for 1 minute.

Step 4. Add the mince; cook stirring, occasionally until browned. Use a spatula to break up any clumps of mince.

Step 5. Add tomato paste and broth; bring to a boil. Reduce to a simmer. Cook until the sauce thickens. Remove from the heat. Serve with yogurt sauce and garnish with fresh herbs.

Variations

Keema curry comes in various forms across different regions and cuisines. Some common variations include:

  • Mutton Keema: Made with minced mutton (goat meat) instead of lamb. I am a big fan of goat meat. It is soooo good!
  • Beef Keema: Similar to lamb keema but prepared with minced beef.
  • Chicken Keema: A lighter version made with ground chicken.
  • Keema Matar: Includes fresh or frozen peas (matar) as a key ingredient.

What to Serve With Keema Curry

My favourite way to this keto keema curry is to keep it low-carb. I love the mint chutney (mint yogurt/sour cream sauce), and I love it with some toast. Yes, you can freeze it in an airtight container. Defrost the curry in the fridge overnight.

Is this a spicy curry?

For me, absolutely not. It does depend on the green chillies used and how much cayenne you use. Be generous or add less to satisfy your needs.

I don’t eat lamb, can I make it with beef mince?

  • 500 g (1 lb) lamb mince (ground lamb)
  • 2 tablespoons (2 tablespoons) tomato paste tomato puree
  • 1 cup (1 cup) lamb broth or beef broth

SOUR CREAM MINT SAUCE

  • ¾ cup (¾ cup) sour cream or plain yogurt
  • ¼ cup (¼ cup) lightly packed mint leaves plus extra to serve
  • ¼ cup (¼ cup) lightly packed coriander leaves or flat-leaf parsley leaves, plus extra to serve
  • 1 tablespoon (1 tablespoon) lemon juice
  • ¼ teaspoon (¼ teaspoon) ground cumin
  • Salt flakes and black pepper, to taste

Instructions

CONVENTIONAL METHOD

  • Place the mint sauce ingredients into a food processor and pulse until smooth. Taste and adjust the seasoning or spices to taste. Chill until needed.
  • Heat ghee in a large skillet over medium heat. Add onion, garlic, ginger, and chilli; sauté until onion softens, about 1-2 minutes.
  • Turn up to medium-high. Add the garam masala, paprika, turmeric, coriander, cumin, and cayenne; stir to combine, cook for 1 minute.
  • Add the mince; cook stirring occasionally until browned. Use a spatula to break up any clumps of mince.
  • Add tomato paste and broth; bring to a boil. Reduce to a simmer. Cook until the sauce thickens. Remove from the heat. Serve with yogurt sauce and garnish with fresh herbs.

THERMOMIX METHOD

  • Add the mint sauce ingredients to mixer; chop 4 sec/speed 7. Scrape down sides of bowl and repeat. Transfer to a small bowl and chill until needed.

Notes

Ingredients and Substitutions Ghee or Avocado Oil:
Substitute with any cooking oil of choice.
Brown Onion, Garlic, Ginger, Green Chilli: Adjust quantities to taste preference.
Garam Masala, Paprika or Cayenne, Turmeric, Ground Coriander, Ground Cumin, and Cayenne: These are key spices; adjust quantities based on desired spice level.
Lamb Mince: I use quality fresh ground lamb mince from the butchers in all my keto lamb mince recipes. Ground beef, goat, chicken or turkey can be substituted.
Storage
Leftover curry can be stored in an airtight container in the refrigerator for up to 3 days. Mint sauce can be stored separately and refrigerated for up to 5 days.
Thermomix Tips
I have left out how to make this in the Thermomix. If you have cooked mince in the Thermomix, you will know it tends to make it a much finer ground meat. It isn’t my preferred way to serve. Here are the steps, in case you only have one option to cook.
Step 1. Add ghee to mixer; heat 2 min/120°C/stir. 3. Add onion, garlic, ginger, and chilli; chop 3 sec/speed 7.
Step 2. Add 2 tablespoons of the spice mix and mince; cook 2 min/120°C/reverse/stir.
Step 3. Use a spatula to break up any clumps. Add tomato paste and broth; cook 7 min/120°C/reverse/stir. Serve with yogurt sauce and garnish with fresh herbs.
To make slow cooked keema curry simply transfer it to a slow cooker after step 4 and add the broth and tomato paste. Slow cook for 4 hours. If it is still really saucy at the end of that time turn the heat up to high and remove the lid to reduce the sauce.
