Let’s just say you are all very lucky to get this Keto White Christmas recipe. Unbeknownst to me this is quite the popular Christmas slice recipe, that I never really tried. So when a bit of a star tester Lynda Watters, got a bee in her bonnet about creating a sugar-free White Christmas slice recipe, when I mentioned it was not on my radar, she got busy.
I ate a lot of sweet stuff at Christmas time growing up but somehow I missed this. However, Lynda it seems grew up with her mum’s famous White Christmas and she decided if I wasn’t going to do it she would. And so ladies and gentlemen you now have a seriously delicious sugar-free Ketro White Christmas recipe to enjoy.
KETO WHITE CHRISTMAS
Let’s learn a little more from our guest recipe author Lynda Watters.
Ever since I can remember Mum would make us a White Christmas slice every year when I was growing up and even throughout our adult years. I was then tasked with the job when I got married and had my own family. So it’s been a tradition for over 50 years.
It was always sickly sweet and you could only ever eat 1 or 2 pieces at the most, but we still loved it.
Last Christmas was our first fully Keto Christmas so no more white Christmas slice for us as it was off the charts loaded with sugar. My adult children still want me, to make it so I thought let’s make a Keto White Christmas version.
I think it’s better than the original as it’s not that super sickly sweet taste that I remember.
Being a tester for Megan has taught me that there is always a way to make things from our past, so with that in mind I set out on a couple of experiments to get to this Mad Keto White Christmas to taste great and to look like a White Christmas slice but without too many carbs.
With a couple of suggestions from Megan here is the recipe for it.

KETO WHITE CHRISTMAS INGREDIENTS
Now the ingredients in this low carb White Christmas recipe are pretty easy to source. If you cannot find one or two of the dried fruits exchange for another low carb fruit option.
35g pistachios
10g dried goji berries
10g dried cranberries
35g macadamias
10g dried blueberries
20g pepitas
20g flaked almonds
40g shredded coconut
½ teaspoon cinnamon
1 teaspoon vanilla extract
100g vitawerx chocholate (reserve half for drizzling over the slice)
45g cacao butter
55g coconut oil
10g MCT vanilla powder
20g unflavoured Whey protein isolate

HOW TO MAKE KETO WHITE CHRISTMAS
Line a 28cm x 18cm slice tin with baking paper.
Add all dry ingredients and vanilla extract to a large mixing bowl
In a microwave safe pyrex jug melt together cacao butter and
coconut oil for 30 secs on high and then stir and repeat until melted.
Add 50g white chocolate and melt into coconut and cacao butter. It may need another 30 seconds in the microwave.
Mix into the dry ingredients and stir to combine well and pour into prepared slice tray.
Place in fridge to set for 30 minutes.
Once the white Christmas slice set melt remaining white chocolate in microwave safe jug and drizzle over the top of the slice. Refrigerate over night. Cut into 3cm x 3cm squares.
WHITE CHRISTMAS SLICE RECIPE TIPS
I like to give the nuts and dried berries a rough chop so they mix more randomly through the slice.
Cinnamon is optional but I like the flavour and next time I will probably add a little more. It still tastes great without it.
I used a pyrex jug to melt the cacao butter and coconut oil then I added in half the block of vitawerx white chocolate and stirred it in till it melted. You may need another 30 seconds in the microvave.
Once combined add in wpi and mct powder. I whisk in small amounts so it doesn’t go lumpy.
Then combine this into the mixing bowl with all the other ingredients.
Once all poured into the slice tin pop it in the fridge until its set on top.
Then melt remaining white chocolate and drizzle over the top.
I refrigerate overnight before cutting into 3cm x 3cm squares.
This is suitable to be frozen. That’s if it lasts that long

- 35 g (1.23 oz) pistachios roughly chopped
- 10 g (0.35 oz) dried goji berries roughly chopped

- 20 g (0.71 oz) pepitas roughly chopped
- 20 g (0.71 oz) flaked almonds
- 40 g (1.41 oz) shredded coconut
- ½ teaspoon (½ teaspoon) cinnamon
- 1 teaspoon (1 teaspoon) vanilla extract
- 100 g (3.53 oz) Vitawerx chocolate reserve half for drizzling over the slice
- 45 g (1.59 oz) cacao butter
- 55 g (1.94 oz) coconut oil
- 10 g (0.35 oz) MCT vanilla powder
- 20 g (0.71 oz) unflavoured whey protein isolate
Instructions
CONVENTIONAL METHOD
- Line a 28cm x 18cm slice tin with baking paper.
- Add all dry ingredients and vanilla extract to a large mixing bowl.
- In a microwave safe pyrex jug, melt together cacao butter and coconut oil for 30 secs on high and then stir and repeat until melted.
- Add 50g white chocolate to cacao butter mix and return to the microwave for 30 seconds. Stir until melted.
- Fold into dry ingredients and combine well. Pour into prepared slice tray.
- Place into fridge to set for 30 minutes
- Once Keto White Christmas is set; melt remaining white chocolate in microwave safe jug and drizzle over the top of the slice. Refrigerate over night.
- Cut into 3cm x 3cm squares
THERMOMIX® METHOD
- Line a 28cm x 18cm slice tin with baking paper.
- Add all dry ingredients and vanilla extract to a large mixing bowl.
- Place cacao butter into mixing bowl and chop 6 sec/speed 10. Add coconut oil to cacao butter and heat 3 min/100℃/stir. Extend cooking time as needed to ensure all cacao butter has melted.
- Add 50g white chocolate to cacao butter mixture and heat 2 min/100℃/speed 1. Follow from Step 5 above.
Notes
Keto White Christmas can be stored in the fridge for up to 2 weeks or frozen up to 2 months.
Substitute any fruit or nuts as preferred, and recalculate the difference in carb content.
Whey protein and MCT powder have been added as a dry ingredient and are zero carb. Possible substitutes include milk powder but are hefty on carbs.
