
Let’s say you are lucky to get this Keto White Christmas recipe. Unbeknownst to me, this is a popular Christmas slice recipe I have never tried. So when a bit of a star tester, Lynda Watters, got a bee in her bonnet about creating a sugar-free White Christmas slice recipe, and I mentioned it was not on my radar, she got busy.
I ate a lot of sweet stuff at Christmas time growing up, but somehow, I missed this. However, it seems Lynda grew up with her mum’s famous White Christmas, and she decided she would if I weren’t going to do it. And so, you now have a seriously delicious sugar free Keto White Christmas recipe to enjoy.

The Ingredients
Dried fruit and nuts – you can use any combination you like. I have selected low carb dried fruits and a tasty combination of my favourite nuts.
Cacao butter – it is essential as it is basically making this a “healthy chocolate”.
Coconut Oil – Use a coconut oil that sets firm. MCT oil is not suitable for this recipe.
Vanilla Whey Protein Isolate – I use vanilla flavoured but you can use any flavour combination you like.
How To Make Keto White Christmas Slice
Step 1. Line a 28cm x 18cm slice tin with baking paper.
Step 2. Add all dry ingredients and vanilla extract to a large mixing bowl. Set aside.
Step 3. In a microwave-safe jug melt cacao butter and coconut oil for 30 seconds on high. Stir and repeat until melted.
Step 4. Add 50g white chocolate and melt into coconut and cacao butter. It may need another 30 seconds in the microwave to melt completely.

Step 5. Mix into the dry ingredients and pour into the prepared slice tray. Place in fridge to set.

Step 6. Once the white Christmas slice set, melt the remaining white chocolate and drizzle over the top of the slice. Refrigerate overnight. Cut into 3cm x 3cm squares.

Ingredients
- 35 g (1 ¼ oz) pistachios roughly chopped
- 10 g (1 tbsp) dried goji berries roughly chopped
- 10 g (1 tbsp) dried cranberries roughly chopped
- 35 g (¼ cups) macadamias roughly chopped
- 10 g (⅔ tbsp) dried blueberries roughly chopped
- 20 g (2 tbsp) pepitas roughly chopped
- 20 g (2 tbsp) flaked almonds
- 40 g (½ cups) shredded coconut
- ½ teaspoon cinnamon
- 1 teaspoon vanilla extract
- 100 g (3.5 oz) sugar free white chocolate reserve half for drizzling over the slice
- 45 g (⅖ cups) cacao butter
- 55 g (¼ cups) coconut oil
- 30 g (1 scoop) unflavoured whey protein isolate
Instructions
CONVENTIONAL METHOD
- Line a 28cm x 18cm slice tin with baking paper.
- Add all dry ingredients and vanilla extract to a large mixing bowl.
- In a microwave safe jug, melt together cacao butter and coconut oil for 30 secs on high and then stir and repeat until melted.
- Add 50g white chocolate to cacao butter mix and return to the microwave for 30 seconds. Stir until melted.
- Fold into dry ingredients and combine well. Pour into prepared slice tray.
- Place into fridge to set for 30 minutes
- Once Keto White Christmas is set; melt remaining white chocolate in microwave safe jug and drizzle over the top of the slice. Refrigerate over night.
- Cut into 3cm x 3cm squares
THERMOMIX® METHOD
- Line a 28cm x 18cm slice tin with baking paper.
- Add all dry ingredients and vanilla extract to a large mixing bowl.
- Place cacao butter into mixing bowl and chop 6 sec/speed 10. Add coconut oil to cacao butter and heat 3 min/100℃/stir. Extend cooking time as needed to ensure all cacao butter has melted.
- Add 50g white chocolate to cacao butter mixture and heat 2 min/100℃/speed 1. Follow from Step 5 above.
Notes
Keto White Christmas can be stored in the fridge for up to 2 weeks or frozen up to 2 months.
Substitute any fruit or nuts as preferred, and recalculate the difference in carb content.
Whey protein has been added as a dry ingredient and are zero carb. Possible substitutes include milk powder but contain more carbohydrates.
