I love Mexican food and this salad is bang on with great flavours. Simple to whip up for a midweek meal or a great weekend dish all year round.

What is a Keto Taco Salad with Ground Beef?

A Keto Taco Salad with Ground Beef is a low-carb adaptation of the traditional taco salad, which originated in Texas during the 1960s. This version replaces high-carb elements like tortilla shells and beans with keto-approved ingredients, making it suitable for those of us following a keto diet. This keto friendly taco salad recipe is simple and perfect! I don’t care if you love all the carbs in the world. This recipe is delicious despite being low carb. I mean just look it! 🤣 Yummo!

The Ingredients

  • Ground Beef – I use lean ground beef. Ground turkey, chicken, or even fresh salmon can be used as high protein options.​
  • Lettuce – Romaine/Cos is deliciously crunchy, but mixed greens or spinach can provide additional nutrients.​
  • Keto Taco Dressing – I love to make my own homemade taco seasoning and dressing. Try my dressing for taco salads or make up your own. Ranch dressing is also perfect with this salad, as is the Creamy Jalapeno Sauce.
  • Avocado – Loads of freshly chopped avocado or a dollop of guacamole works well.

How to make a Taco Salad Keto

Step 1. Place a large skillet over medium heat. Once hot, add taco seasoning and ground beef. Cook until nicely browned.

Step 2. Prepare pico; add all ingredients to a small bowl or jar; toss or shake to combine and set aside. (See variation notes below).

Step 3. If you haven’t already made the dressing whip it up now.

Step 4. Prepare pico; add all ingredients to a small bowl or jar; toss or shake to combine and set aside.

Fun Variations

Beyond being a standalone dish, this salad can brighten up so many other kind of meals.

  • Lettuce Wraps: Use large lettuce leaves to wrap the salad ingredients for a handheld option.​ Fill a few lettuce cups with low carb taco salad and roll it up. Perfect for easy lunches or getting the kids to eat their veggies.
  • Stuffed Avocados: Scoop out some avocado and fill it with the salad mixture for a fun presentation.​
  • Taco-Stuffed Peppers: Fill bell peppers with the salad mixture and bake for a warm, comforting meal.
  • Keto Taco Pasta: Sounds great, doesn’t it? Mix taco meat, salad and dressing through keto pasta. So simple. Yes, I serve it cold, and it may even be tastier than a keto taco salad bowl. 😂

Serving Suggestions

Well, I just love Mexican cuisine, so I have a few ideas for serving this salad! Serve it with pickled red onions, homemade pickled jalapenos (they are the best), shredded cheddar cheese, or cauliflower rice if you feel the need. 😂 I have never been a fan of rice with tacos or burritos, but you do you.

Serve with Keto Tortillas or Keto Tortilla Chips for easy burritos or tacos.

Ingredients 

QUICK PICO DE GALLO

  • 1/4 red onion thinly sliced
  • 1/4 bunch fresh coriander leaves roughly chopped
  • Zest and juice of half a lime
  • 1/4 cup cherry tomatoes quartered

CONVENTIONAL METHOD

  • Place a large wide pan over medium-high heat. Once hot add taco seasoning and ground beef and cook until nicely browned.
  • Meanwhile prepare pico; add all ingredients to a small bowl or jar; toss or shake to combine and set aside.
  • Divide the lettuce serving bowls. Top with ground beef, a drizzle of the taco salad dressing, avocado, and pico de gallo.

THERMOMIX TACO SALAD

  • (I recommend browning the beef in a pan, but if you need to use the TM)
    Place ground beef and taco seasoning into the mixer; Cook 10 min/100°C/reverse/speed 1 or until the beef is browned.
  • Add onion and coriander; chop 4 sec/speed 5. Scrape down sides of mixing bowl with spatula.
  • Add lime juice; mix 3 sec/speed 3.
  • Add tomatoes; mix 5 sec/speed 2. Transfer to a serving bowl. Follow from step 3 above.

Storage Tips
  • Refrigeration: Store leftover components separately in airtight containers. The cooked ground beef can be refrigerated for up to 3 days. Fresh vegetables like lettuce and pico de gallo are best consumed within 1-2 days to maintain crispness.
  • Freezing: While the seasoned ground beef can be frozen for up to 2 months, it’s advisable to prepare fresh vegetables and pico de gallo when ready to serve, as freezing affects their texture.
  • Can I meal prep keto taco salad? Yes, prepare and store components separately in the refrigerator for up to 3 days. Assemble just before serving to maintain freshness.

    It is indeed ‘Wow’ as Vicky says Megan. We had this for dinner tonight with your Soft Wraps and so delicious. I had mine on a plate with wrap and the taco fillings on top and used a knife and fork – my DH though had his soft wrap with filling and folded up and was so impressed his wrap didn’t fall apart.
