My Keto Caramelized White Chocolate recipe is an easy recipe but there are a few tips you need to know first.

This recipe is basically showing you how to make your own sugar free Caramilk chocolate.

Caramilk is a caramelized chocolate by Cadbury that is extremely popular. To be honest I have never tried it. It was a product that has come out since I changed to a low carb diet and I am not one to stray from usual foods anyway. BUT I do know that many of you wanted a keto version, so I had to do it of course. This is the perfect copycat Caramilk recipe (bonus points for being sugar free too).

So, before you get baking please ensure you read my FAQs below and the notes in the recipe card. This recipe may be easy, but it can be tricky if you don’t know your oven well enough.

Oh, and for our thermal cooing fans I have also included a Thermomix Caramilk recipe. I wanted you to be able to make your own keto caramelized white chocolate in your Thermomix too.

Keto Caramelized White Chocolate Ingredients

This sugar free caramelized white chocolate recipe only has one ingredient. yep, but I am going to be brand specific. This recipe has only been tested successfully with Vitawerx white chocolate.

Vitawerx chocolate is found at loads of health food shops local to you or online like Elite Health Supplements. Alternatively, good low carb online stockists also keep a range of Vitawerx, e.g. Keto Eats Australia.

Noshu chocolate was tested but proved to go brittle and very hard. I have found this chocolate does not like to melt unless it is in a ganache etc.

Well Naturally was also tested and it splits between solids and oils.

How to Make Keto Caramelized White Chocolate

The biggest keto to success at making caramelized white chocolate is knowing your oven and its temperature is correct. I won’t lie our testers have had varied results making this.

You can make the white chocolate caramelize in just 60 minutes at 110°C. I did this in my fan forced Smeg oven. I mix and spread it out every 10 minutes and can get a dark golden colour with smooth consistency. However, for this recipe I have reduced the oven temp to 100°C fan-forced or 120 static oven.

Line a large baking tray with baking paper. Break the chocolate into pieces and place the tray into the oven and bake for 10 minutes.

I want to watch this first 10 minutes and just see that the chocolate is sweating. It should at the end of the 10 minutes be perfectly melted. When you spread it out into a rough 22cm square it should be smooth and creamy and still white. If yours is already starting to look golden your oven is running hot and turn it down.

Set the oven for another 10 minute timer. Once finished mix and spread again.

Set the oven for another 10 minute timer. Once finished mix and spread again.

After 1 hour if this mix is still pale turn the oven up to 110°C and bake for another 10 minutes. Mix and spread and repeat for a further 10 minutes or until the chocolate is golden.

Once the chocolate is at the desired level of caramelizing spread it into a shallow chocolate bar mold. Alternatively, use a lined baking tray or silicone mold of choice. Refrigerate until set.

How to Make Keto Caramilk in a Thermomix

Making “Caramilk” in a Thermomix is pretty easy. However, I do like the baked texture better.

To make the caramelized white chocolate in the Thermomix simple place the pieces into the mixer bowl. Cook 10 min/100°C/stir.

Using a spatula scrape the chocolate from the bottom of the bowl and mix manually. Cook a further 10 min/100°C/stir. Scrape and mix the chocolate quickly and thoroughly then transfer to the silicone mold. Refrigerate until set.

Once the caramelized chocolate has set you can use just the same you would any keto chocolate. Melt and mix in a ganache, keto mud cake, pudding, buttercream and more.

FAQs and Troubleshooting

Can I get Vitawerx from the supermarket? Sorry major shopping centres do not carry this product.

Can I use another brand of chocolate? We have tested Noshu and Well Naturally and both failed the test. No other brands have been tested.

Can I make this on the stove top? Yes, you can with patience and watching your temperatures. Stir occasionally and do not have the temp up to high as it will easily burn and become grainy.

Can I make it in the microwave? No.

Instructions

CONVENTIONAL METHOD

  • Preheat oven to 100°C fan forced or 120°C/240°F static oven.
  • Line a large baking tray with baking paper.
  • Place pieces of chocolate onto the baking tray. Bake 10 minutes. See Notes.
  • Using a silicone spatula scrape and mix the chocolate spreading into a rough 22cm square.
  • Return tray to oven and bake a further 10 minutes. Repeat this 5 times.
  • If the chocolate is still pale increase to oven temp to 110°C and bake a further 10 to 20 minutes mixing after the first 10 minutes.
  • Once the desired level of caramelization is achieved scrape the chocolate into a silicone mold. Smooth over and place into the fridge until set.

THERMAL METHOD

  • Place pieces of chocolate into the mixer bowl. Cook 10 min/100°C/stir.
  • Using a silcone spatula scrape the chocolate from the bottom of the mixer and mix by hand to mix through.
  • Cook a further 10 min/100°C/stir. Scrape the chocolate into a silicone mold. Smooth over and place into the fridge until set.

Notes

Check your oven temperature. If your oven does run hot, then lower the temperature than the recipe at first and then slowly increase it if the chocolate is not caramelizing. It does not ruin the chocolate if you start lower. If your oven is too high, and it burns or dries out the chocolate this cannot be undone. Better to be safe.

    I found my oven was best at 100° fan forced and it was a perfect consistency after an hour in the oven with the ten minute stir intervals . The last 20 minutes at the higher temperature of 110° gave the chocolate the lovely caramel colour. Caramilk chocolate that’s sugar free. You truly are a genius 😍😍
    You definitely need to try this .

    I found out that my oven is 20 Celsius out .. just by using this recipe.
    I have learnt a lot about my oven in the last week.
    Bought oven thermometer and digital thermometer to test the oven. Both confirmed that my oven is out and also old.

    Will go by oven /digital thermometers now to cook all your beautiful recipes.

    I opted to use the Kitchen Aid Cook Processor to make this in the end. Used conventional method to make the chocolate and used the thermal method temperature as a guide for the heat on my kitchen aid.
    Looks delicious .. don’t want to eat it as know once I break down it will just vanish 🤣🤣
