Why You’ll Love this Recipe

No sugar! Guacamole that is commercially produced usually has sugar added to it, along with lots of other additives; and you don’t need any of that! Homemade guacamole is almost no carbs guacamole too!

Quick and easy – this is such an easy guacamole recipe. It takes hardly any time to make, so you can make fresh guacamole with whatever flavour variation you choose. Serve with tortilla chips for a simple dish to eat while watching the super bowl or chilling by the pool with friends.

Variations – make Whole30 mayonnaisepaleo, and keto-friendly guacamole with just a few ingredients. Perfect with Chilli Con Carne, Taco Salad, or just about any dish in my opinion.

All the ingredients for our easy keto guacamole recipe are all very easily sourced at most supermarkets around the globe.

  • Avocados – well yes these are readily available most of the year around, but can be a bit expensive when off season. Pick firm just ripe avocados.
  • Red onion – otherwise know as Spanish onion. You can substitute shallot, or white onions just fine. 
  • Fresh coriander leaves – I know some people hate coriander/cilantro. Me, I lurve it! Substitute fresh flat-leaf parsley if you don’t like coriander.
  • Lime juice – must be fresh. Don’t bother with those terrible juice bottles.
  • Pickled jalapeños (or fresh) –  I love my jalapeños so much I grow quite a lot of them.

PRO-TIP Did you know that you can indeed freeze avocados? I cut them in half, put them back together and wrap in foil and freeze. It is not my favourite way to eat them but hey when they are cheap.

How to Make Guacamole

A 4 ingredient guacamole is so easy to make. You do not need to have any fancy appliances.

Step 1. Roughly chop the avocado and red onion on a cutting board and place them into a large bowl, mortar or molcajete (Mexican mortar) and mash. I leave mine a little chunky.

Step 2. Add the remaining ingredients and just mix the guacamole until combined. It is that easy!

Frequently Asked Questions

How do I stop avocado or guacamole turning brown?

I have a couple of ways I retard the browning process. My favourite method is simply covering the avocado or guacamole with a piece of plastic wrap. Press it firmly against the guacamole and press out any air bubbles. Chill for up to 2 days. The other method is to cover it with neutral taste oil then cover it in plastic wrap. If the guacamole is completely covered with the oil it stops the oxidation of the fruit and preserves it for a short while. Pour the oil off when ready to serve. Add a little extra lime juice to remove any residual oiliness.

Can I freeze guacamole?

You can but I prefer to eat it fresh. If freezing it, spoon into an ice cube tray and freeze then place into a ziplock bag. Alternatively, place it into a vacuum seal bag and vac seal for best freshness.

How many carbs are in guacamole?

This recipe has around 1g net carbs per serve. Guacamole is healthy and nutritious and keto-friendly.

Flavour Variations

Guacamole is so easy to pimp. Here are just a few of my easy guacamole recipes.

Tajin – Tajin is a chilli lime spice and it is delicious mixed in guacamole.

Garlic – to this recipe I would add just a 1/4 teaspoon of minced fresh garlic. It is beyond delicious!

Creamy Guacamole – add some sour cream, yogurt (use coconut yogurt for creamy vegan guacamole) or cream cheese to make it more of a dip or avocado sauce. Adding some sour cream and extra lime juice can also extend the guacamole when avocados are expensive to buy.

Mexican Guacamole – this is my favourite when I add a little ground cumin and coriander. Add a little pico de gallo and it is the best Mexican dip ever and still low in carbs.

Ingredients 

  • 2 (2) avocados
  • 1/4 (1/4) red onion finely minced
  • 1/4 cup (0.25 cup) coriander leaves finely chopped
  • 1 tablespoon (1 tbsp) lime juice
  • Salt and pepper to taste

OPTIONAL

Instructions

CONVENTIONAL METHOD

  • In a large bowl mash avocados with a fork. I like to leave it a little chunky with just a rough mashing. Add remaining ingredients and mix to combine. Season to taste

THERMAL METHOD

  • Place the onion, coriander and jalapeños (if using) into the mixer; chop 4 sec/speed 5.
  • Add the remaining ingredients and mix 15 sec/speed 4. Scrape and repeat if necessary. Season to taste

Notes

INGREDIENTS
Look for ripe or slightly firm avocados. No one likes black guacamole.
Fresh lime juice is preferred over bottled. Lemon juice or pickle juice can be used in its place.
Don’t forget to season the guacamole before serving.
STORING
Guacamole is best served immediately. If stored overnight press a piece of cling film directly onto the guacamole to remove all air. 
This recipe yields approximately 4-6 servings. The actual number of servings will depend on your preferred portion sizes. 
To calculate the weight of one serving, prepare the recipe as instructed. Weigh the finished recipe, then divide the weight of the finished recipe by 4-6. The result will be the weight of one serving.
