The Ingredients

  • Heavy Cream: Provides a rich and creamy base. Also known as heavy whipping cream or thickened cream.
  • Cheddar Cheese: Offers a sharp, tangy flavour. Gouda or Gruyère are good alternatives.
  • Parmesan Cheese: Adds a salty, umami flavour. Pecorino Romano can be used as a substitute.
  • Butter: Adds richness. Ghee or coconut oil can be used instead.

How To Make Keto Cheese Sauce

Step 1. Melt the butter in a small saucepan over medium-high heat.

Step 2. Add cream cheese and whisk until combined and cream cheese has softened.

Step 3. Add the cream and whisk to combine.

Step 4. Add the remaining ingredients and whisk until the cheese has melted and the sauce is smooth. Season to taste.

Ingredients 

  • 40 g (8 tsp) butter I use salted butter
  • 50 g (10 tsp) cream cheese
  • 125 g (0.5 cups) thickened cream US equiv. whipping cream
  • 1/4 cup (1/4 cup) parmesan (25g) I just roughly chop
  • 1 cup (1 cup) cheddar cheese (100g) I use a cheddar or tasty cheese for flavour, See Note 1
  • 1/2 teaspoon (1/2 teaspoon) Dijon mustard or seeded mustard, See Note 2
  • Salt and Pepper to taste

Instructions

CONVENTIONAL METHOD

  • Melt butter in a small saucepan over medium heat. Add cream cheese and whisk until combined.
  • Add remaining ingredients and whisk continuously until slightly thickened, about 1-2 minutes. Season to taste.

THERMOMIX METHOD

  • Place all ingredients into the mixing bowl and cook 6 min/80 ̊C/speed 4/MC off. Season to taste.

INSTANT POT METHOD

  • Turn pot onto Sauté function. Add all ingredients and whisk until sauce is thick melted and delicious. Season to taste.

Notes

  1.  You can use any kind of cheese in this keto cheese sauce. I prefer to use ones with flavour like a Pepperjack, Gouda, or strong Cheddar.
  2. Any mustard including dry mustard can be used to flavour the sauce.
  3. Cheese sauce is best not frozen.
  4. Keep in the fridge up to 7 days.
  5. Gently reheat on the stove or in short bursts in a microwave, whisking between heating.

Best Ways to Store Keto Cheese Sauce

To store keto cheese sauce, place it in an airtight container in the refrigerator. It will keep for up to 5 days. When reheating, do so gently on the stove or in the microwave, stirring occasionally and adding a bit of heavy cream if needed to reach the desired consistency.
