Rissoles originated in France, where it was traditionally a small, savory pastry filled with meat, fish, or vegetables. Over time, variations of homemade beef rissoles developed in different countries, including Australia, where it became popular as a meat patty typically made with ground beef or lamb. The patties are usually mixed with a mix of onions, garlic, seasonings, breadcrumbs, and a handful of vegetables. They’re a versatile one pot dish that can be baked, fried, or even air-fried to suit your preferences.

The Ingredients

  • Lean ground beef mince – Opt for lean ground beef to keep the fat content lower. Swap beef mince for ground pork, ground lamb, turkey mince, or even chicken mince.
  • Eggs – Eggs act as a binder to hold the ingredients together. If you’re allergic to eggs, leave the egg out. It will still hold together perfectly or you could add some mashed avocado if you prefer.
  • Seasonings – I use garlic, onions, with Italian Seasoning and sweet paprika in this recipe. Truthfully you can add any seasoning blends you love to the
  • Worcestershire Sauce – Now, I do not use Worcestershire but this doesn’t mean you can’t. Two other great options for Worcestershire include gluten-free tamari or gluten-free Vegemite.

How To Make Beef Rissoles

Note: Remove beef mince from the fridge 15 minutes before preparing to make. Leaving the meat out for this time will give you juicier rissoles.

  1. Place all the ingredients into a large bowl. Mix with your hands until well combined.
  2. Shape the mixture into 8 patties.
  3. Add olive to a skillet over medium high heat. Pan fry the rissoles for 4-5 minutes on each side until golden and cooked through.

Alternative Ways to Cook Rissoles

  1. Baking: Preheat the oven to 190°C (375°F) and place the rissoles on a baking sheet lined with parchment paper. Bake for 20-25 minutes, or until cooked through.
  2. Frying: Heat a skillet over medium heat and add a small amount of oil. Cook the rissoles for 3-4 minutes on each side, or until golden brown and cooked through.
  3. Air Frying: Preheat the air fryer to 190°C (375°F) and place the rissoles in a single layer in the basket. Cook for 12-15 minutes, flipping halfway through, until crispy and cooked through.

Customise your rissoles to suit your taste preferences and experiment with different flavour combinations, making them a versatile and delicious meal option for any occasion!

  1. Mediterranean Rissoles: Incorporate flavors of the Mediterranean by adding ingredients like chopped olives, sun-dried tomatoes, feta cheese, and oregano to the ground beef mixture. Make lamb rissoles with all these yummy flavours for a whole different twist!
  2. Tex-Mex Pork Rissoles: Give your rissoles a Southwestern twist by seasoning them with taco seasoning mix and mixing in ingredients like diced pickled jalapenos, and shredded cheddar cheese. Serve with salsa and guacamole for a fiesta-inspired meal.
  3. Italian Rissoles: Infuse your rissoles with Italian flavours by adding grated Parmesan cheese, chopped fresh basil, and a bambino mozzarella ball to the centre to the ground beef mixture. Can I freeze Rissoles?

Absolutely! Store in an airtight container and defrost in the fridge overnight.

Can beef rissoles be pink in the middle?

Yes, they can. If you are using freshly ground beef there is nothing wrong with serving medium or even rare. There is a lot of debate online but it comes down to the quality of beef you are using. If it is fresh 100% ground beef then it should be safe. If in doubt of the quality and freshness, cook it all the way through. The USDA recommends cooking ground beef to an internal temperature of 160°F (71°C) to kill any harmful bacteria.

Ingredients 

  • 1/2 (1/2) onion finely diced
  • 1 clove (1 clove) garlic minced
  • 2 tablespoons (2 tablespoons) fresh parsley chopped
  • 1 teaspoon (1 teaspoon) Italian seasoning

  • 500 g (1 lb) lean ground beef
  • 1 (1) egg
  • Salt flakes and black pepper to taste

FOR COOKING

  • 1-2 tablespoons (1 tablespoons) olive oil

Instructions

CONVENTIONAL METHOD

  • Place all the ingredients into a large mixing bowl. Mix with your hands until well combined.
  • Take a handful of the mixture and shape it into a round rissole. Repeat until all the mixture is used up, forming 8 rissoles.
  • Season each side of the rissole with salt and pepper. This is an optional step; aside from seasoning the meat the salt flakes also help to form a tasty golden crust.
  • Heat oil in a skillet over medium heat; add the rissoles (cook in batches if need be) and cook for 4-5 minutes on each side, or until nicely browned and cooked through.
  • Once cooked, remove the rissoles from the skillet and drain on paper towels.
  • Serve rissoles hot with your choice of side dishes, such as a fresh salad or steamed vegetables.

THERMOMIX RISSOLES METHOD

  • Add the onion, garlic parsley, Italian seasoning, and paprika to the mixer; chop 4 sec/speed 7. Scrape down sides of bowl.
  • Add remaining ingredients; mix 20 sec/speed 3. Follow from step 2 above.

    I made our rissoles to the basic recipe (with the addition of a small grated carrot) and pan-fried them in a large cast iron pan. Served with a simple leafy salad and avocado, they were absolutely delicious! Next time, I might try cooking them in my basket-style air fryer – and there definitely WILL be a next time!
